Ingredients

  • 300 grams Greek yogurt (or plain yogurt, strained)
  • 300 grams flour (or as much as the yogurt absorbs)
  • 1 tbsp olive oil extra virgin (plus a few drops to cook the pitas)
  • A pinch of salt (about 10 grams)

Instructions

  • Sift the flour into a bowl.
  • Make a well in the center and add the yogurt, the olive oil, and the salt.
  • Mix until a soft dough forms. Add a little more flour if needed. You can also knead the dough on a table.
  • Let the dough rest for 20 to 25 minutes.
  • Divide the dough into small balls. Roll each into a 15 cm circle (it should be quite thin, do not worry, the dough will not stick to the work surface).
  • Heat a cast-iron pan until very hot. Brush lightly with oil.
  • Cook each pita 2–3 minutes per side.
  • Serve warm, or cut into pieces and bake for chips.
