- 1 pack puff pastry (or 6 to 8 phyllo pastry sheet)
- 400 grams pumpkin purée
- 1 small onion diced
- 1-2 garlic cloves minced
- 2 eggs
- 1 tsp dried oregano
- ¼ tsp fresh dill
- Salt and black pepper to taste
- 1-2 tbsp honey (for drizzling) optional
- ½ cup crumbled feta optional
- olive oil extra virgin
Follow this recipe to cook the pumpkin. Sauté the onion and the garlic in olive oil until everything is soft.
Season with salt, pepper, oregano, and dill (optional).
Turn off the heat and let it cool for about 15 minutes.
Add the pumpkin and the eggs.
Preheat the oven to 180 °C (~350 °F).
Layer a silicon tray or greased baking dish with a puff pastry sheet (or 2–3 phyllo sheets, brushing each with olive oil).
Spread the pumpkin filling evenly.
Bake for 40–45 minutes until the pastry is golden and the pumpkin surface looks firm.
Serve with a drizzle of thyme honey or some crumbled feta on top.
