In a blender or food processor, combine the watermelon cubes and Greek yogurt.
Blend until smooth and creamy. If you prefer a sweeter ice cream, add honey or maple syrup, and blend again.
Optionally add a few drops of vanilla extract for a richer flavor.
Pour the mixture into individual ice cream molds. If you prefer, you can also freeze it inside a bread loaf tray covered in parchment paper.
Cover and freeze for at least 4-6 hours or until it hardens to your desired consistency.
Once frozen, remove it from the freezer and let it sit for a few minutes to soften slightly. Kids usually prefer it in a popsicle form.
For adults, follow the same procedure before scooping, if you prefer to serve it that way.
