Greek-style Watermelon Ice Cream

A refreshing and light ice cream recipe made with watermelon

Ingredients
  

  • 3 cups fresh watermelon cubed (seeds removed)
  • 1 cup Greek yogurt (plain or flavored)
  • 2 tbsp honey or maple syrup (optional for sweetness)
  • ½ tsp vanilla extract (optional for extra flavor)

Instructions
 

  • In a blender or food processor, combine the watermelon cubes and Greek yogurt.
  • Blend until smooth and creamy. If you prefer a sweeter ice cream, add honey or maple syrup, and blend again.
  • Optionally add a few drops of vanilla extract for a richer flavor.
  • Pour the mixture into individual ice cream molds. If you prefer, you can also freeze it inside a bread loaf tray covered in parchment paper.
  • Cover and freeze for at least 4-6 hours or until it hardens to your desired consistency.
  • Once frozen, remove it from the freezer and let it sit for a few minutes to soften slightly. Kids usually prefer it in a popsicle form.
  • For adults, follow the same procedure before scooping, if you prefer to serve it that way.

Notes

  • Scoop and serve immediately for a soft-serve texture, or let it freeze longer for a firmer consistency.
  • You can mix in other fruits like strawberries, blueberries, or peaches.
  • I recommend the Cuisinart ice cream maker to make your life easier and your ice cream better!
