Greek Yogurt Ice Cream

A simple ice cream recipe with Greek yogurt and the fruits you prefer.

Ingredients
  

  • 2 cups Greek yogurt (plain or flavored)
  • 1 ½ cups fresh or frozen fruit (berries, mango, peaches, etc.)
  • 2 tbsp honey or maple syrup (optional for sweetness)
  • 1 tsp vanilla extract (optional for added flavor)
  • 1 tbsp lemon juice (optional for extra tang)

Instructions
 

  • In a blender or food processor, combine the Greek yogurt and your choice of fresh or frozen fruit.
  • Blend until the mixture becomes smooth and creamy. If you want extra sweetness, add honey or maple syrup and blend again.
  • Optionally, add a teaspoon of vanilla extract for added flavor or a tablespoon of lemon juice for a tangy kick.
  • Pour the mixture into a loaf pan or shallow container. You can also use individual ice cream molds – kids love them!
  • Cover and place it in the freezer for at least 4-6 hours, or until it hardens to your desired consistency.
  • Once frozen, remove the container from the freezer and let it sit for a few minutes before scooping to soften slightly.
  • Scoop and serve immediately for a soft-serve texture, or let it freeze longer for a firmer consistency.

Notes

  • You can mix 2 or more fruit varieties for unique flavors.
  • You can also add chocolate scales to make a stracciatella-flavored ice cream.
  • I recommend the Cuisinart ice cream maker to make your life easier and your ice cream better!
