Instructions
Cook the cauliflower:
Steam or boil the cauliflower florets until they're tender but still holding their shape, about 8–10 minutes.
Drain well and let cool slightly.
Prepare the base:
While the cauliflower cools, grate the onion (if using), mince the garlic, and chop the herbs. Place them in a large mixing bowl.
Add to the herb mixture the breadcrumbs, the flour, the egg, and the cubed bread to the bowl with a splash of milk. Let it all soak for a few minutes. This helps give the fritters a delicate, fluffy texture.
Mash and mix:
Mash most of the cauliflower lightly with a fork, but set aside a few small florets to keep whole.
Add everything to the bowl with the herbs, onion, garlic, soaked bread, cheese, and egg.
Adjust the batter:
Add the Parmesan cheese, stirring until you get a thick but slightly sticky mixture that holds together.
Season with salt and pepper.
Shape and fry the fritters:
Heat olive oil in a large skillet. Using a spoon, drop portions of the batter directly into the hot oil and flatten them slightly with the back of the spoon.
Cook each fritter for about 3–4 minutes per side, until crispy and golden brown on the outside and tender inside.
Transfer to paper towels to drain excess oil.
Serve:
Enjoy your fritters hot with a squeeze of lemon juice, or pair them with Greek yogurt or my cheese dipping sauce.
