- 1 red bell pepper finely chopped
- 1 small white onion finely chopped
- 1 medium ripe tomato chopped
- 1-2 garlic cloves finely minced
- ¼ cup olive oil extra virgin (or any oil you prefer)
- 3-4 tbsp red wine vinegar (adjust to taste)
- 1 tsp dried oregano (or 1 tablespoon fresh oregano)
- Salt and freshly ground black pepper to taste
Place the chopped bell pepper, onion, tomato, and garlic into a medium bowl.
In a separate bowl, whisk together the olive oil and vinegar.
Pour the dressing over the vegetables.
Add oregano, salt, and pepper. Stir well.
Let it sit for at least 20 minutes before serving to allow the flavors to meld.
Serve at room temperature alongside grilled meats or sausages.
