Tuna Pie in Puff Pastry

Ingredients
  

  • 2 sheets puff pastry chilled
  • 250 grams canned tuna in olive oil drained (reserve the oil)
  • 2-4 anchovy fillets (optional)
  • 1 medium tomato diced
  • 1 red bell pepper diced
  • 1-2 scallions white part separated from green part, finely chopped
  • 2 garlic cloves minced
  • 120 grams thick tomato passata (about ½ cup)
  • 2 hard-boiled eggs chopped
  • 1 tbsp capers (optional)
  • 2-3 tbsp olive oil (use the tuna oil + extra if needed)
  • 1 tsp thyme (dried or fresh)
  • ¼ tsp paprika or chili flakes
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 1 tsp sugar

Instructions
 

  • Prep the vegetables. Dice the tomato and red bell pepper. Separate the white and green parts of the scallions. Mince the garlic with the anchovies and thyme until it forms a paste. Add a tablespoon of tomato paste to the garlic and anchovy mixture
  • Start the filling. Heat the tuna oil with a little extra olive oil in a large pan. Add the garlic-anchovy paste and the capers. Sauté gently for about 5 minutes until fragrant.
  • Cook the vegetables. Add the white parts of the scallions, diced tomato, and red bell pepper. Cook for about 10 minutes until softened, stirring occasionally. Season with salt, pepper, paprika or chili, and sugar.
  • Add the tuna. Stir in the drained tuna and cook for another 5 minutes.
  • Finish the sauce. Pour in the passata and let it simmer until thickened (at least 10 more minutes). Five minutes before finishing, stir in the green parts of the scallions to keep their color and flavor fresh. Remove from heat and let the filling cool.
  • Add the eggs. Chop the hard-boiled eggs with a fork so they stay chunky, then gently mix them into the cooled filling.
  • Assemble the pie. Line a baking dish or silicone tray with one sheet of puff pastry. Spoon in the filling, then cover with the second sheet. Seal the edges. Use leftover pastry to decorate if desired.
  • Bake. Preheat the oven to 200°C (390°F) and bake for about 20 minutes, or until golden and puffed.
  • Serve. Enjoy warm with a salad in summer or with soup in winter. Also delicious at room temperature.
