Saganaki Cheese Recipe

Ingredients
- 1 block of Kefalotyri, Graviera, Feta, or Halloumi cheese
- ¼ cup all-purpose flour (or gluten-free flour)
- 2 tablespoons olive oil
- 1 shot of ouzo, Cretan raki, or brandy (optional, for flaming effect)
- ½ lemon, for serving
How to Make Sagakani Cheese
Procedure
- Begin by slicing the cheese into a ½-inch thick slab.
- Lightly coat the cheese in flour, shaking off the excess.
- Heat olive oil in a pan over medium-high heat. Once hot, fry the cheese for about 1-2 minutes per side, until golden brown and crispy.

- For the signature flaming effect, carefully pour a splash of ouzo over the cheese and ignite it with a lighter. Allow the flames to subside.

- Squeeze fresh lemon juice over the cheese for an extra burst of flavor, and serve immediately with warm pita or crusty bread.
