Ingredients
  

  • 2 slices rustic whole-grain or sourdough bread
  • 1 ripe avocado
  • Juice of ½ lemon
  • Salt and freshly ground black pepper, to taste
  • 50 grams feta cheese, crumbled (about ¼ cup)
  • 4-6 Kalamata olives pitted and sliced (optional)
  • Fresh oregano finely chopped
  • Sweet paprika for color
  • Olive oil extra virgin, for drizzling

Instructions
 

  • Toast the bread:
    Lightly toast the slices of bread until golden and crisp.
  • Prepare the avocado spread:
    In a bowl, mash the ripe avocado with a fork until smooth.
  • Add lemon juice, salt, and freshly ground black pepper. Mix well.
  • Assemble the toast:
    Spread the mashed avocado evenly over each slice of toasted bread.
  • Add toppings:
    Sprinkle crumbled feta over the avocado layer.
  • Add sliced Kalamata olives (if using) and halved cherry tomatoes if desired.
  • Garnish:
    Sprinkle with freshly chopped oregano and a pinch of sweet paprika for color.
  • Drizzle a small amount of extra virgin olive oil over the top.
  • Serve immediately:
    Enjoy the Greek-style avocado toast while the bread is still warm and crisp.

Notes

More ideas:
  • Add a poached or fried egg on top for extra protein.
  • Substitute feta with goat cheese or ricotta for a creamier variation.
  • Use microgreens or arugula as an extra fresh topping.
