- 2 slices rustic whole-grain or sourdough bread
- 1 ripe avocado
- Juice of ½ lemon
- Salt and freshly ground black pepper, to taste
- 50 grams feta cheese, crumbled (about ¼ cup)
- 4-6 Kalamata olives pitted and sliced (optional)
- Fresh oregano finely chopped
- Sweet paprika for color
- Olive oil extra virgin, for drizzling
Toast the bread:Lightly toast the slices of bread until golden and crisp. Prepare the avocado spread:In a bowl, mash the ripe avocado with a fork until smooth. Add lemon juice, salt, and freshly ground black pepper. Mix well.
Assemble the toast:Spread the mashed avocado evenly over each slice of toasted bread. Add toppings:Sprinkle crumbled feta over the avocado layer. Add sliced Kalamata olives (if using) and halved cherry tomatoes if desired.
Garnish:Sprinkle with freshly chopped oregano and a pinch of sweet paprika for color. Drizzle a small amount of extra virgin olive oil over the top.
Serve immediately:Enjoy the Greek-style avocado toast while the bread is still warm and crisp.
