Homemade Phyllo Dough for Pies

My Cretan Recipe
This is the traditional homemade phyllo used in Crete for small kalitsounia pies.

Ingredients
  

  • 1 kg all-purpose flour
  • ½ cup tsikoudia (raki) or substitute with white vinegar, vodka, or grappa
  • 1 tsp salt
  • 1 cup olive oil extra virgin
  • water as needed to form a soft dough

Instructions
 

  • Place the flour in a large mixing bowl and stir in the salt.
  • Pour in the olive oil and tsikoudia. Begin mixing with your hands or a spoon.
  • Pour in lukewarm water bit by bit, kneading constantly, until the dough becomes soft, elastic, and smooth.
  • Cover the dough with a cloth and let it rest for 30 minutes to make it easier to roll out.
  • Roll out the dough to a 1–2 mm thickness. Thanks to the olive oil, it won’t stick to your surface. Use a cutter or lsmall plate to cut out round shapes (about 8 cm in diameter).
  • Add a small spoonful of your preferred filling. For frying, fold into half-moons and seal. For baking, form into squares and leave a bit of filling visible.

Cooking Options

  • Frying: Heat olive oil in a pan. Fry pies on both sides until golden. Drain on kitchen paper.
  • Baking: Place pies on a tray lined with parchment paper. Brush with beaten egg, sprinkle white sesame seeds for cheese pies and black sesame for spinach pies. Bake at 180°C (350°F) for about 30 minutes, or until golden.

With fillings (average estimates per small pie, 8 cm round):
  • Cheese pies (mizithra/feta, baked): ~280–320 kcal
  • Spinach pies (greens + herbs + little cheese, baked): ~230–260 kcal
  • Fried versions: add ~40–60 kcal per pie due to oil absorption
