In a separate bowl I whisk together the dry ingredients so everything blends evenly before it meets the butter mixture. When the dough comes together, it’s soft and smooth — just firm enough to hold together, just tender enough to roll easily once it chills.

Ingredients
  

  • 225 grams butter softened
  • 200 grams sugar
  • 1 egg large
  • 1 tbsp vanilla extract
  • 330 grams all-purpose flour
  • tsp baking powder
  • A pinch of salt

Instructions
 

  • Preheat the oven to 180°C / 350°F. Line two baking sheets with parchment paper.
  • Cream the butter and sugar until light and fluffy.
  • Add the egg and the vanilla, mixing until smooth.
  • Whisk the flour, the baking powder, and salt together in a separate bowl.
  • Add the dry ingredients to the wet ingredients and mix until the dough forms.
  • Shape into a disc, wrap, and chill 30 minutes.
  • Roll the dough to 0.6–1 cm thickness; cut shapes with cookie cutters.
  • Place them on baking sheets, spacing 2–3 cm apart.
  • Bake them for 8 to 10 minutes, until the edges are just set but still pale.
  • Cool for 5 minutes on the sheet, then move to a rack to cool completely.
  • Decorate once fully cool, if desired.
