Garlic Yogurt Bread Buns with Sweet Chili Chicken Filling

Soft, flavorful, and incredibly easy to make, these Garlic Yogurt Bread Buns are my twist on these New York-style bagels. Made with Greek yogurt, garlic, and parmesan, they’re perfect for sandwiches, snacks, or as a side to dinner. I often fill them with leftover sweet and spicy chicken and roasted veggies for the best (and quickest) homemade sandwich ever!

If you’ve been following my recipes, you know how much I love making Greek yogurt bagels. They’re one of the most popular recipes on my blog—easy, fuss-free, and always delicious. This time, I took that same dough and gave it a new life: Garlic Yogurt Bread Buns.

These buns are soft, chewy, and flavored thanks to garlic powder, fresh minced garlic, and a spoonful of parmesan. The dough is a variation of my bagels (the no-boil kind, because I love to keep things simple), but instead of shaping them into bagels, I form them into round buns—perfect for sandwiches.

I bake these buns in batches, and they’ve quickly become my family’s go-to for quick summer lunches. My kids take them to school stuffed with ham and cheese or chicken and veggies.

I often mix leftover grilled chicken with diced tomatoes and bell peppers, add mayo and Greek yogurt for creaminess, and stuff these buns. This is such a clever way to repurpose leftovers, and it feels like you’ve made a brand-new meal.

How I Make These Garlic Yogurt Buns

Ingredients for the buns.

I start with the same base dough I use for my bagels—Greek yogurt and flour—but this time I add plenty of garlic flavor. Garlic powder, freshly minced garlic cloves, and Parmesan cheese all go into the mix. The dough comes together quickly in a bowl and only needs a few minutes of kneading on a floured surface.

Add plenty of garlic.

Once the dough is smooth and elastic, I divide it into pieces and shape them into round buns instead of bagels. After placing them on a tray, I brush them with egg wash for a golden finish.

Sometimes I sprinkle sesame seeds, oregano, or even more Parmesan on top.

Before going into the oven.

The buns bake until puffed and golden, filling the kitchen with the most amazing garlic bread aroma.

They cool slightly before I slice them open and stuff them with my favorite fillings—in the photo, leftover sweet chili roasted chicken and veggies.

Ingredients
  

  • 400 grams Greek yogurt strained
  • 400 grams all-purpose flour
  • 1 tsp teaspoon garlic powder
  • 4 garlic cloves minced
  • 1 tbsp Parmesan cheese grated
  • 1 tsp Salt with dried basil or regular salt and dried hebs of your choice
  • 2 tsp baking powder
  • 1 egg (for egg wash)
  • Sesame seeds, oregano, or more Parmesan for topping (optional)

Instructions
 

  • Preheat the oven to 170°C (340°F).
  • Line a baking tray with parchment paper.
  • In a large bowl, mix the flour, salt (with herbs or regular), garlic powder, and baking powder.
  • Add the Greek yogurt, parmesan, and minced garlic.
  • Mix until a dough forms.
  • Knead briefly on a lightly floured surface until smooth.
  • Do not add too much flour.
  • Divide the dough into 6–8 equal portions and shape them into round buns.
  • Place the buns on the baking tray, brush with egg wash, and sprinkle with toppings if using.
  • Bake for 25–30 minutes, until golden and puffed.
  • Allow to cool for at least 15 minutes before slicing.

Ingredients
  

  • 1 cup leftover sweet chili roasted chicken chopped small
  • 1 cuo roasted vegetables (zucchini, peppers, eggplant, onion, potatoes) diced small
  • 1 fresh tomato diced
  • 1 fresh red bell pepper diced
  • 2 fresh celery sticks diced
  • 1 tbsp mustard
  • 2 tbsp mayonnaise
  • 2 tbsp Greek yogurt
  • Salt and pepper to taste
  • Juice of half a lemon

Instructions
 

  • Place the mayonnaise, Greek yogurt, mustard, and lemon juice in a bowl.
  • Dice the fresh veggies and add to the condiments.
  • Add the chopped chicken and diced roasted vegetables.
  • Season with salt and pepper.
  • Mix well until creamy and evenly combined.
  • Fill the Garlic Yogurt Bread Buns generously with the mixture and serve.
