I hate to end the French fries halfway through my Sunday Barbecue, therefore I started making more fries to accompany the meat. However, it’s been a few Sundays already that tons of fried potatoes remain, and I hate to see them go to waste… What to do?

A Spanish tortilla is a simple yet delicious dish that combines eggs with potatoes and other savory ingredients to create a thick, golden omelet.

The Spanish tortilla is one of those humble and timeless dishes. In Spain, it’s a staple of home kitchens and tapas bars, made with little more than eggs, potatoes, and olive oil.

In my country, Argentina, where waves of Spanish immigrants brought their recipes and traditions, the tortilla quickly became part of everyday family cooking. It’s hearty, affordable, and perfect for repurposing leftovers—qualities that fit well with the Argentine table.

I grew up eating tortilla often, and it always carried a special meaning for me because of my grandmother. She would make it using whatever we had at home: yesterday’s potatoes, bits of sausage, or a stray onion.

I can still picture her flipping the tortilla with that confident wrist motion, the smell of onion and olive oil filling the kitchen, and the way she always insisted on letting it rest before slicing—“so the flavors get to know each other,” she would say.

Ingredients
  

  • 1 leftover sausage or chorizo chopped
  • 1 portion of leftover fried potatoes diced
  • 1 small onion fried
  • 1 small red or green bell pepper fried
  • 4 eggs
  • 1 tbsp grated Parmesan
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Olive oil for frying

Instructions
 

  • Prepare the ingredients: Use the leftovers cold. Chop the fried potatoes and sausage/chorizo, set aside.
  • Sauté the onion & pepper: In a non-stick pan, fry the onion and pepper in a drizzle of olive oil over medium heat until softened and golden. You can also add some garlic for a deeper taste.
  • Mix the eggs: In a bowl, whisk eggs with Parmesan, oregano, salt, and pepper. Stir in sausage and potatoes.
  • Cook the tortilla: Pour the mixture into the pan. Cook over low–medium heat for about 5 minutes, gently stirring until the edges start to set. (For a moister tortilla, whisk in an extra egg before cooking.)
  • Flip & finish: Place a plate over the pan, flip the tortilla carefully, and slide it back into the pan. Cook for another 3–4 minutes, until fully set and golden.
  • Serve: Let the tortilla rest for 2–3 minutes, then slice. Enjoy with a tomato salad dressed with lemon, oregano, garlic, and extra virgin olive oil.
