Tirokafteri, a beloved Greek dip, delivers just that. With its creamy base of whipped feta cheese and the warmth of spicy peppers, this dip is a crowd-pleaser that’s easy to prepare and packed with personality.

In Greece, Tirokafteri often takes center stage in mezze platters, served alongside olives, dolmades, and fresh bread.

Its name translates to “spicy cheese,” and while each region in Greece has its unique twist, the essence of the dish remains the same—a perfect balance of tangy, creamy, and spicy.

For Christmas, this versatile dip can complement a variety of other appetizers or shine on its own as a standout starter.

Ingredients for Tirokafteri

  • 1½ cups crumbled feta cheese
  • 1 large roasted red pepper (jarred or homemade), drained
  • 1 small chili pepper (or ½ tsp red chili flakes)
  • 2 tbsp olive oil, plus extra for drizzling
  • 1 tbsp Greek yogurt (optional, for extra creaminess)
  • 1 tsp red wine vinegar or lemon juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste

For Serving:

  • Warm pita bread, sliced
  • Vegetable sticks (carrots, cucumbers, celery)

Preparation: How to Make Tirokafteri

Roast the pepper

  • Preheat your oven’s broiler.
  • Place the red pepper on a baking sheet and broil, turning occasionally, until the skin is charred and blistered.
  • Transfer the pepper to a bowl, cover with plastic wrap, and let it steam for 10 minutes.
  • Peel off the skin and remove the seeds.

Blend the dip

  • In a food processor, combine the feta cheese, roasted red pepper, chili pepper or chili flakes, olive oil, yogurt (if using), vinegar or lemon juice, and garlic.
  • Blend until smooth and creamy. Adjust the spice level by adding more chili if desired.

Serve your tirokafteri

  • Transfer the dip to a serving bowl and drizzle with a little olive oil.
  • Garnish with a sprinkle of chili flakes or a few finely diced roasted peppers for added flair.
  • Serve with pita bread and vegetable sticks for dipping.

Tips for Perfect Tirokafteri

  • Choose high-quality Feta
    Opt for Greek feta made from sheep’s or goat’s milk for the best flavor and texture.
  • Adjust the heat
    If you prefer a milder dip, use sweet red peppers and reduce the amount of chili. For more heat, add extra chili flakes or a spicier pepper variety.
  • Make ahead
    Tirokafteri can be prepared a day in advance. The flavors deepen as it sits, making it even more delicious when served.

    Combine equal parts of myzithra and feta for a unique flavor that still delivers the signature tangy-spicy balance.
