1. Mediterranean Beef and Barley Soup
Ingredients
- 1 cup pearl barley
- 1 lb beef stew meat, cubed
- 1 onion, chopped
- 1 potato, diced
- 2 carrots, diced
- 2 celery stalks, chopped
- 100 gr green peas
- 4 cups beef broth
- 1 can diced tomatoes (14 oz)
- 2 cloves garlic, minced
- 1 tsp oregano
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil

Instructions
- Heat olive oil in a pot over medium heat.
- Brown the beef on all sides.
- Add onion, potatoes, green peas, carrots, celery, and garlic.
- Sauté until softened.
- Pour in beef broth, diced tomatoes, barley, oregano, cumin, salt, and pepper.

- 1 cup pearl barley
