Why Greek Yogurt is a Game-Changer for Cakes
Greek yogurt is a powerhouse ingredient in baking. It adds moisture without making the cake too dense, provides a subtle tang that enhances flavor, and even contributes a bit of protein.

Unlike traditional yogurt, Greek yogurt has less whey, making it a perfect addition to cakes that need structure without being heavy. It also acts as a natural tenderizer, replacing some of the fat while still keeping the cake soft.
Greek yogurt works well in place of buttermilk, sour cream, or even some of the butter in your recipe. This ensures cakes without excessive fat or sugar while it also enhances the leavening process when combined with baking soda or baking powder.
Gluten-Free Greek Yogurt Almond Cake Recipe
Ingredients
- 1 1/2 cups gluten-free all-purpose flour blend (with xanthan gum included)
- 1/2 cup almond flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup Greek yogurt (full-fat preferred)
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 tablespoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup milk (whole milk recommended)
- 1/4 cup sliced almonds (for topping, optional)
How to Prepare this Gluten-Free Cake
Instructions
Preheat & prepare
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan or line it with parchment paper.

Mix dry ingredients
- In a medium bowl, whisk together the gluten-free flour blend, almond flour, baking powder, baking soda, and salt.
- Set aside.

Cream butter & sugar
- In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.

Add eggs & extracts
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla and almond extracts.
Incorporate Greek yogurt
- Gently mix in the Greek yogurt until combined

Combine wet & dry ingredients
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients.
- Mix until just combined.
Bake
- Pour the batter into the prepared cake pan and smooth the top. Sprinkle with sliced almonds if using.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool & serve
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve plain, with fresh berries, or a drizzle of honey.

Substituting Greek Yogurt
If you don’t have Greek yogurt on hand, you can use:
- Sour cream (1:1 ratio)
Provides a similar tangy flavor and richness.
- Buttermilk (1:1 ratio)
Thinner in consistency but still adds moisture and tang.
- Regular yogurt (strained for thickness)
Similar in taste but slightly less creamy.
- Philadelphia cheese or Cottage cheese (blended)
Works in a pinch but will slightly alter the texture.
