Cretan Potato Salad with Smoky Garlic-Yogurt Sauce
A rustic, creamy Cretan potato salad with a mayo made with smoky roasted garlic, Greek yogurt, and lemon — perfect with grilled meats, meze platters, or all on its own.

Potato salad in Crete isn’t about heavy dressings or over-complication — it’s about clean ingredients and earthy flavors. The salad usually features dill and other herbs, but this time, it has a super flavorful twist: garlic!
I enriched this version with roasted garlic and thick Greek yogurt. A combination that turns humble boiled potatoes into a creamy, smoky dish that feels both rustic and refined.

The roasted garlic deepens the flavor and adds a gentle smokiness, while parsley and lemon brighten the whole bowl. Simple, satisfying, and perfect for pairing with grilled meats or hearty meatballs.
Smoky Garlic Mayo for Potatoes
You begin with the potatoes — not peeled, not overthought. Just scrub them well, cut them in big chunks and boil them skin on. The skins help lock in flavor and nutrients, and once they’re cooked and slightly cooled, you can peel them easily with your fingers or even leave some skin on for texture (I often leave the skin on).


While the potatoes bubble away, you make the sauce. This isn’t your average mayo bomb. The secret is a whole head of garlic, roasted until caramel-sweet and smoky, which you can prepare even a day ahead.
Cut the top of a whole garlic head, add a few drops of olive oi,l and a pinch of salt. Wrap it in foil, toss it in the oven at 200°C (400°F) for about 40 minutes until the cloves are soft and golden. Once cool enough to handle, squeeze that roasted gold into a bowl. You can keep it in the fridge until it’s time to use it.


In a blender, add the garlic, a few spoonfuls of Greek yogurt (full-fat or 2%), a bit of good-quality mayo for creaminess (light mayo works well too), olive oil, and fresh lemon juice for brightness. Blend until it becomes a sauce that looks more like a smoky, savory custard.
Once the potatoes are fork-tender, drain and let them cool. Put the rustic chunks inside a serving bowl and toss them gently with the sauce so they soak it in. Season with salt and pepper to taste or add a drizzle of extra virgin olive oil if you want.

This Mediterranean-style side dish is surprisingly light. It’s perfect for meal prep since it keeps well in the fridge, and because the flavors are mellow and creamy, it’s totally kid-friendly, too.
Pair it with your Cretan-style chicken & zucchini meatballs, grilled lamb, or just a slab of crusty bread and call it a meal.

Cretan Potato Salad with Smoky Garlic-Yogurt Sauce
Ingredients
- 800 grams medium potatoes skin on
- 1 whole garlic head
- 120 grams Greek yogurt
- 2 tbsp mayonnaise
- 1½ tbsp fresh lemon juice
- ¼ cup chopped parsley
- Salt & black pepper to taste
- Olive oil extra virgin
Instructions
- Roast the garlicPreheat oven to 200°C (400°F). Slice off the top of a whole garlic head, drizzle with olive oil, wrap in foil, and roast for 40 minutes. Let cool, then squeeze out the soft cloves.
- Boil the potatoesScrub potatoes and boil them whole, skin on, in salted water for 20–25 minutes or until fork-tender. Drain and let cool slightly.
- Make the sauceIn a bowl, mash the roasted garlic. Add yogurt, mayonnaise, lemon juice, parsley, olive oil, salt, and pepper. Blend until smooth and set aside.
- Assemble the salad and serveGently toss the potatoes (already cooled down) with the sauce until well coated.
- Serve cold. Optionally drizzle extra olive oil and a sprinkle of herbs.
