Quick Cranberry Muffins From the Pantry (Plus a Chocolate Version for Kids)

This Saturday, I woke up craving cranberry muffins with my first cup of coffee — the warm, slightly tangy kind that feels just right in the quiet hours of the morning.

It was the kind of craving that doesn’t go away or get distracted by anything else; it simply waits patiently until you step into the kitchen and do something about it.

A pantry recipe that feels like a treat

What made it even better was realizing I already had everything I needed in the pantry. Flour, sugar, eggs, milk, oil, dried cranberries.

No mixer, no special ingredients, no planning ahead. In less than 20 minutes, the muffins were in the oven, and by the time the rest of the family woke up, the kitchen smelled like warm butter, vanilla, and coffee-shop mornings.

These are the kind of muffins I love making most: quick, forgiving, and generous. They’re not fussy, they don’t demand perfection, and they adapt beautifully — especially when you have different tastes in the house.

Which brings me to my favorite trick.

How I make them (my way, every single time)

Ingredients.
Mix the dry ingredients in a bowl.

I always make these muffins the same way — simple, fast, and without overthinking it.

I start by preheating the oven and lining a muffin tin. That way, once the batter is ready, nothing slows me down. Muffins don’t like to wait.

In one bowl, I whisk together the dry ingredients. I make sure the salt is evenly distributed — cranberry muffins really benefit from that extra pinch, especially when using dried fruit, which can be sweeter than fresh.

Add the wt ingredients.
Mix but not overmix!

In another bowl, I mix the wet ingredients just until combined. No beating, no mixer, just a whisk and a few calm turns. The batter should look smooth but not airy.

Once the wet ingredients go into the dry, I stir gently, just until everything comes together. I always add a little extra milk here to loosen the batter — I want it thick, but spoonable, not heavy.

Now comes the part I never skip.

Half a batch with cranberries.
Half a batch with chocolate.
I always add extra chocolate or cranberries on top before baking them.

I divide the batter into two bowls.
In one half, I fold in the dried cranberries.
In the other, I fold in milk chocolate chips or chocolate flakes — because my son absolutely adores chocolate muffins with his morning milk.

Both versions bake together, side by side, and everyone gets exactly what they love.

Ingredients
  

  • 300 grams all-purpose flour
  • 150 grams sugar
  • 2 tsp baking powder
  • ¾ tsp salt
  • 1 large egg
  • 240 ml milk
  • 90 ml neutral oil (sunflower or vegetable)
  • 1 tsp vanilla extract
  • 120 grams dried cranberries

Optional (for half the batch):

  • 100 grams milk chocolate chips or chocolate flakes

Instructions
 

  • Preheat the oven to 190°C (375°F).
  • Line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Make a whole in the dry ingredients and add the whisked egg, milk, oil, and vanilla
  • Stir gently, just until no dry flour remains. Do not overmix.
  • The batter should be thick but soft.
  • If you're making half a batch with chocolate and the other half with cranberries, divide the batter evenly into two bowls. If not, simply fold in the cranberries and move on to step 9
  • Fold the dried cranberries into one half. Fold the chocolate chips into the other half.
  • Spoon the batter into the muffin cups, filling them nearly to the top.
  • Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool slightly, then enjoy warm — preferably with coffee.

Extra tips & variations

Cranberry vs chocolate — or both

Splitting the batter is a small step that makes a big difference. You get variety without extra effort, and everyone feels considered. If you prefer, you can also:

  • Add orange zest to the cranberry batter
  • Sprinkle coarse sugar on top before baking
  • Mix white chocolate with cranberries for a bakery-style muffin

Why dried cranberries work so well
