I personally buy mascarpone in bulk for tiramisu because it’s my kids’ favorite, but not all of it gets used. It feels like a waste to let it sit, so I came up with this easy mascarpone cream as a perfect solution.
This cream is incredibly versatile. It works beautifully as a filling for this chocolate cake (or any chocolate cake!) or served in small dessert glasses topped with crushed nuts, a sprinkle of powdered dark chocolate, or even a few buttery cookies like “lingue di gatto.”

How I Make This Mascarpone Cream

When there’s leftover mascarpone in the fridge, it’s perfect to turn into this silky cream. First, I whisk the eggs with sugar until they’re pale and fluffy, forming the base of the cream.


Next, I work the mascarpone in a separate bowl to soften it and make it easy to handle. Once it’s done, I fold it carefully into the egg mixture using a spatula. Gentle, upward motions ensure the cream stays light and airy. But this is not really crucial if you plan to use it as a cake filling; in that case, turn to the mixer to make things easier and faster.

The cream goes to the refrigerator until I’m ready to use it. Sometimes, I serve it as a simple dessert, placing some cream in a glass, adding some crushed nuts, a bit more cream, and dusting with cocoa powder. Crushed more nuts or small butter cookies add a lovely finishing touch.

As I said, I also use it as cake filling. It works great in this cocoa cake, but it’s also versatile and neutral enough to fill in any other cake. The simplicity of this cream allows the mascarpone’s natural richness to shine, while giving flexibility to enjoy it in different ways.

- 2 tbsp granulated sugar

Instructions
- Prepare the egg mixture: Put the eggs in a mixing bowl, add the sugar, and beat with electric whisks until pale and fluffy.
- Prepare the mascarpone: In a separate bowl, soften the mascarpone with a spatula until smooth.
- Combine: Gently fold the mascarpone into the egg mixture using a spatula, moving from bottom to top to preserve the airy texture.
- Chill: Refrigerate the cream until ready to use.
- Serve as dessert: Transfer the cream into a piping bag fitted with a star tip. Pipe into individual glasses, dust with cocoa powder, and optionally top with crushed nuts or butter cookies.
- Use as cake filling: Layer the cream between chocolate cake layers for a smooth and creamy filling.
