Mushroom-Stuffed Bruschetta with Mozzarella, Tomato & Parsley

A hearty take on bruschetta, topped with juicy baked mushrooms and paired with a crisp, fresh salad.

For the Bruschetta:
- 4 slices rustic bread (country loaf, sourdough, etc.)
- 4 large mushrooms (Portobello or large champignons)
- mozzarella cheese cut into chunks or slices
- cherry tomatoes sliced
- fresh parsley finely chopped
- olive oil extra virgin
- 1 garlic clove halved
- coarse sea salt
- fresh or dried rosemary
For the Fresh Salad:
- Fresh white champignon mushrooms thinly sliced
- Lettuce torn
- Red cabbage finely sliced
- Cherry tomatoes halved
- Greek salad dressing (get the recipe Greek Salad Dressing)
Prepare the Mushrooms:
Wash the mushrooms gently and pat dry.
Remove the central stem to create space for the filling.
Season the inside lightly with salt.
Fill each mushroom cap with mozzarella chunks, chopped parsley, a few slices of cherry tomato, and a drizzle of olive oil.
Oven method:
Preheat oven to 200°C / 390°F (fan-assisted if possible).
Place mushrooms on a baking tray lined with parchment.
Bake for 12–15 minutes, or until the cheese is melted and bubbling, and the mushrooms are tender.
Air fryer method:
Set the air fryer to 180°C / 350°F.
Place the stuffed mushrooms in the basket.
Air fry for 8–10 minutes, or until cheese is melted and the mushrooms are cooked through.
Grill the Bread:
Preheat your grill pan (or outdoor grill to medium-high heat)).
Add olive oil, garlic, coarse salt, and rosemary on the pan and let it heat.
Brush the bread slices on both sides with olive oil and rub each slice with the halved garlic clove.
Place the bread (seasoned side facing the heat) on the hot grill.
Toast for about 1–2 minutes per side, or until golden and slightly charred.
Make the Salad:
Toss together the sliced champignons, lettuce, red cabbage, and cherry tomatoes.
Dress with your prepared Greek salad dressing right before serving.
Assemble the Bruschetta:
Place one baked mushroom cap on each slice of grilled bread.
Drizzle with a little extra olive oil if you like.
Serve alongside the fresh salad and enjoy immediately.
