Mushroom-Stuffed Bruschetta with Mozzarella, Tomato & Parsley

Sometimes all I want is something simple but a little bit special, like these mushroom-stuffed bruschetta. I love how the garlicky, toasted bread pairs with the mushrooms, mozzarella, and my favorite tomatoes – sweet cherry tomatoes. It’s the kind of dish I throw together when I feel like cooking something nice without spending hours in the kitchen.

This mushroom-stuffed bruschetta is one of those comforting, no-fuss meals where simple ingredients do all the work.

Big, meaty mushrooms become the perfect vessel for gooey mozzarella, cherry tomatoes, and parsley. And when you place them on top of garlicky, rosemary-scented grilled bread—trust me, it’s next-level delicious. I love serving this with a crisp salad on the side to keep things light and fresh.

How to Make This Mediterranean-Style Bruschetta

Start by choosing large mushrooms—portobello or big white champignons work beautifully. Give them a gentle wash and remove the thick central stem to create space for the filling.

Ingredients.
Remove the stems.

Inside each mushroom, tuck in a few chunks of mozzarella, slices of cherry tomatoes, a sprinkle of parsley, and a little olive oil. Season lightly with salt, then they’re ready for the oven or the air fryer.

Salt the interior of the mushrooms and add mozzarella and parsley.
Finish with the tomatoes for them to get a golden color

While the mushrooms bake until the top bubbles, prepare the bread. Heat a grill pan and drizzle with olive oil and sprinkle with coarse salt, and some rosemary before placing the bread.

Brush your bread slices with olive oil. Rub them first with a cut clove of garlic and then grill until golden, just enough to give them a bit of char.

Season and grill the pan (I do this for meat, chicken, and many more dishes).
When the bread is golden brown and fragrant, remove it from the pan.

Once the mushrooms are soft and the cheese is melted, place one on top of each grilled bread slice. A drizzle of olive oil on top never hurts.

I like to serve these with a fresh salad of raw champignons, lettuce, red cabbage, and cherry tomatoes, tossed in a bright Greek-style vinaigrette—zesty for cutting through the richness of the mushrooms and cheese.

Ingredients
  

For the Bruschetta:

  • 4 slices rustic bread (country loaf, sourdough, etc.)
  • 4 large mushrooms (Portobello or large champignons)
  • mozzarella cheese cut into chunks or slices
  • cherry tomatoes sliced
  • fresh parsley finely chopped
  • olive oil extra virgin
  • 1 garlic clove halved
  • coarse sea salt
  • fresh or dried rosemary

For the Fresh Salad:

  • Fresh white champignon mushrooms thinly sliced
  • Lettuce torn
  • Red cabbage finely sliced
  • Cherry tomatoes halved
  • Greek salad dressing (get the recipe Greek Salad Dressing)

Instructions
 

Prepare the Mushrooms:

  • Wash the mushrooms gently and pat dry.
  • Remove the central stem to create space for the filling.
  • Season the inside lightly with salt.
  • Fill each mushroom cap with mozzarella chunks, chopped parsley, a few slices of cherry tomato, and a drizzle of olive oil.

Oven method:

  • Preheat oven to 200°C / 390°F (fan-assisted if possible).
  • Place mushrooms on a baking tray lined with parchment.
  • Bake for 12–15 minutes, or until the cheese is melted and bubbling, and the mushrooms are tender.

Air fryer method:

  • Set the air fryer to 180°C / 350°F.
  • Place the stuffed mushrooms in the basket.
  • Air fry for 8–10 minutes, or until cheese is melted and the mushrooms are cooked through.

Grill the Bread:

  • Preheat your grill pan (or outdoor grill to medium-high heat)).
  • Add olive oil, garlic, coarse salt, and rosemary on the pan and let it heat.
  • Brush the bread slices on both sides with olive oil and rub each slice with the halved garlic clove.
  • Place the bread (seasoned side facing the heat) on the hot grill.
  • Toast for about 1–2 minutes per side, or until golden and slightly charred.

Make the Salad:

  • Toss together the sliced champignons, lettuce, red cabbage, and cherry tomatoes.
  • Dress with your prepared Greek salad dressing right before serving.

Assemble the Bruschetta:

  • Place one baked mushroom cap on each slice of grilled bread.
  • Drizzle with a little extra olive oil if you like.
  • Serve alongside the fresh salad and enjoy immediately.

Notes

  • If cooking in an Air Fryer, the total cooking time is about 30 minutes.

Variation Ideas

  • Spinach & Feta Filling:
    Swap the mozzarella for crumbled feta and stir some sautéed spinach into the filling. Add a pinch of oregano, too.
  • Sundried Tomato & Goat Cheese:
    Fill the mushrooms with creamy goat cheese (in Crete, we use myzithra), chopped sundried tomatoes, and a sprinkle of basil.
  • Vegan Version:
    Use a plant-based mozzarella alternative or skip the cheese entirely. Add diced roasted red peppers, cherry tomatoes, and fresh herbs for a vegan option.
  • Swap the Bread:
    Try using toasted pita, grilled flatbread, or slices of sourdough. Or skip the bread entirely and serve the baked mushrooms over a bed of couscous or lentils for a lighter, gluten-free meal.
  • Mediterranean Tapenade Mushroom:
    Fill the mushrooms with black olive tapenade, chopped cherry tomatoes, and a little mozzarella or feta. Serve on grilled polenta slices instead of bread for a creative variation.
