How I Make This Halloween Cake

Making this cheesecake is surprisingly easy, even if it looks like something from a fancy bakery window. I start by crushing the biscuits in the mixer — half chocolate, half vanilla — until they look like sandy crumbs.


Then, I add the melted butter, just enough to pull everything together. I press that mixture into the bottom of my springform pan, making sure the base is firm and even, then pop it into the oven to get a little toasty, no more than ten minutes.


While that’s baking, I move on to the filling — my favorite part. I place the cream cheese in the big stand mixer bowl and I work it for a few minutes to make it softer. After that, I add a dollop of thick Greek yogurt that gives the cheesecake a subtle tang.
Sugar, eggs, and vanilla come next, each one whisked in until the batter looks smooth. Then I swirl in the melted chocolate — not too much, just enough to give it that rich flavor without overpowering the creamy base. Optionally, you can also add a few spoons of dark cocoa powder.


Finally, a little cornstarch to help it set in the oven. Once the mixture is ready, I pour it over the base and tuck the pan into a water bath.
This step keeps the cheesecake from cracking and gives it a custard-like texture. It bakes low and slow until the center still has a slight wobble — that’s the secret to a perfectly creamy cheesecake.


After baking, I let it cool completely (no shortcuts here!) and slide it into the fridge for a few hours, or overnight if I’m planning ahead.


The next day, I warm up some cream, pour it over chopped dark chocolate, and stir until it turns into a shiny, thick ganache. That dark chocolate layer goes right on top of the chilled cheesecake, and then it’s time for the fun: decorating!


I scatter sugar eyes in pairs all over the top — dozens of them — until it looks like a crowd of little monsters peering out of the dark. It’s silly, simple, and always gets a laugh.

- 1 Stand mixer
Ingredients
For the base:
- 12 vanilla biscuits
- 12 chocolate biscuits
- 100 grams unsalted butter melted
For the cheesecake filling:
- 600 grams thick cream cheese at room temperature
- 100 grams Greek yogurt
- 2 large eggs
- 100 grams sugar
- 1 tsp vanilla extract
- 50 grams melted dark chocolate
- 3 tbsp corn starch
- 2 tbsp dark powdered cocoa (optional)
For the ganache topping:
- 100 grams dark chocolate
- 100 grams whipping cream
For decoration:
- Sugar eyes
Instructions
Make the base:
- Preheat the oven to 160 °C (320 F).
- Crush the biscuits until fine, then mix with melted butter.
- Press into a 20–22 cm (8–9 inch) springform pan and bake for 10 minutes.
- Let it cool while preparing the filling.
Prepare the cheesecake:
- Beat together the cream cheese, yogurt, sugar, and vanilla until smooth.
- Add eggs one by one, then mix in melted chocolate and cornstarch.
- Pour the mixture over the cooled base.
- Place the pan into a larger tray and pour hot water halfway up the sides (bain-marie).
- Bake for 1 hour at 160°C (320°F) until the edges are set and the center slightly wobbly.
- Cool completely in the oven with the door ajar, then refrigerate for at least 4 hours.
Ganache
- Heat cream until just simmering, then pour over chopped dark chocolate.
- Stir until smooth and glossy.
- Pour over the chilled cheesecake and spread evenly.
- While the ganache is still soft, decorate generously with sugar eyes.
Chill & serve:
- Let the cake sit in the fridge for about 30 minutes. Slice, serve, and enjoy your spooky masterpiece!
