Chocolate Chip Pumpkin Muffins – Soft, Spiced & Perfect for Fall
Pumpkin season makes baking feel extra cozy. When the weather starts to cool down, these pumpkin muffins are one of my favorite things to make — they’re soft, lightly spiced, and just sweet enough to make the kitchen smell amazing. And the best part? Melted chocolate in every bite!

I started making them a few years ago when I had leftover pumpkin purée from another recipe (probably soup or pie!), and they instantly became a fall staple. The pumpkin keeps them moist, the spices add warmth, and the chocolate chips make them fun — especially if you’re baking for Halloween

Now, as soon as I see pumpkins at the market here in Crete, I grab a few and roast them for all kinds of recipes — and these muffins are always on the list.
Why You’ll Love These Pumpkin Muffins

- Soft and fluffy – thanks to the pumpkin purée, they stay moist for days (even if you make them ahead for a party!).
- Perfectly spiced – cinnamon, nutmeg, and a touch of clove make them smell like fall.
- Not too sweet – they’re just right for breakfast, snacks, or dessert. And easy to dress up with frosting if you want something more festive.
- Easy to make – one bowl, simple ingredients, and ready in under 30 minutes.
- Halloween pumpkin cupcakes – toss in some mini chocolate chips or decorate with orange frosting and candy eyes for a spooky, kid-friendly treat.
How I Make Them

Start with the pumpkin purée: I usually use homemade pumpkin purée (roasted and mashed), but canned works just as well. It gives the muffins their soft texture and natural sweetness.
Mix the wet ingredients: In one bowl, whisk together pumpkin purée, olive oil, brown sugar, eggs, and vanilla until smooth and creamy.

Add the dry ingredients: In a separate bowl, I combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and a pinch of clove. Then I mix everything into the wet bowl, adding a bit at a time, until just combined.

Fold in the chocolate chips: I add a generous handful (or two!) of chocolate chips — mini ones melt beautifully throughout the batter.

Bake: I divide the batter into muffin liners, bake until puffed and golden, and let them cool slightly before serving. They smell incredibly fresh from the oven and stay moist for days.

Notes
Nutrition
>> These are naturally lighter than most bakery muffins since they’re oil-based and use pumpkin purée for moisture instead of butter.
