Vegetarian Moussaka Recipe: A Delicious Meat-Free Twist on a Greek Classic

A vegetarian version of moussakas that swaps meat for a hearty blend of vegetables. This recipe features layers of roasted eggplant, vegetables, and béchamel.

Ingredients to make this vegetarian moussaka

For the vegetable layers

  • 3 large eggplants, sliced into 1/2-inch rounds
  • 1 large zucchini, sliced into 1/2-inch rounds
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 large bell pepper (red or yellow), diced
  • 1 carrot, peeled and grated
  • 2 cups cooked lentils (or chickpeas for a different texture)
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp ground cinnamon (optional, but traditional)
  • Salt and pepper to taste
  • Olive oil for sautéing

For the Béchamel sauce

  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk (dairy or plant-based)
  • 1/4 tsp ground nutmeg
  • Salt and white pepper to taste
  • 1/2 cup grated Parmesan cheese (optional, or use a vegetarian alternative)

Instructions to prepare the dish

Prepare the vegetables

  • Preheat your oven to 400°F (200°C).
  • Lay out the sliced eggplant and zucchini on a baking sheet. Brush each slice lightly with olive oil and sprinkle with salt.
  • Roast in the oven for about 20-25 minutes, flipping halfway through, until the vegetables are tender and slightly golden. Remove from the oven and set aside.
  • While the eggplant and zucchini are roasting, heat a tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté for about 5-7 minutes until softened.
  • Add the grated carrot and continue to cook for an additional 3 minutes.
  • Stir in the cooked lentils (or chickpeas), diced tomatoes, tomato paste, oregano, thyme, cinnamon, salt, and pepper. Let the mixture simmer on low heat for 10-15 minutes until thickened. Remove from heat and set aside.

Make the Béchamel sauce

  • In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously to create a roux. Continue whisking for 1-2 minutes to cook the flour, but don’t let it brown.
  • Slowly pour in the milk while whisking to prevent lumps. Keep whisking until the sauce thickens, about 5-7 minutes.
  • Stir in the nutmeg, salt, and white pepper, and remove from the heat. If using, mix in the grated Parmesan cheese to add richness and flavor. Set aside.

Assemble the Moussaka

  • In a large baking dish, start by layering half of the roasted eggplant slices at the bottom. Follow with a layer of half of the vegetable-lentil mixture, spreading it evenly.
  • Add a layer of zucchini slices, followed by the remaining vegetable-lentil mixture.
  • Top with the remaining eggplant slices, making sure everything is well-distributed.

Add the Béchamel sauce

  • Pour the prepared béchamel sauce evenly over the top layer of eggplant. Use a spatula to smooth it out and ensure the sauce covers the entire surface.
  • Sprinkle a little extra Parmesan (or vegan cheese) on top, if desired.

Bake

  • Preheat the oven to 375°F (190°C).
  • Cover the moussaka with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbling.
  • Let the moussaka cool for about 10 minutes before slicing and serving. This allows the layers to be set and makes for easier serving.

Serving Suggestions

Vegetarian moussaka is a perfect dish for a family dinner or special occasion. It pairs beautifully with a simple Greek salad made with cucumber, tomatoes, olives, and feta cheese, or a side of warm pita bread. For a lighter meal, serve with a side of roasted vegetables or steamed greens like spinach or kale.

Tips and Variations:

  • Add more veggies
    Experiment with other vegetables like mushrooms, spinach, or potatoes to add more texture and flavor.
  • Make it ahead
    Moussaka can be prepared in advance and refrigerated overnight. Simply bake it when ready to serve.
  • Vegan version
    For a vegan moussaka, use plant-based butter, milk, and cheese alternatives in the béchamel sauce. Tofu or tempeh can be used instead of lentils or chickpeas for extra protein.
