How to Make a Classic Greek Salad (Horiatiki)
There’s something simple and satisfying about a Greek salad. It’s rustic and fresh, and perfect as a side dish or light meal on a warm day. No complicated steps, no fancy gadgets, just fresh ingredients coming together beautifully.


Let’s begin with the vegetables. Start by chopping ripe tomatoes into wedges. This is the heart of your salad, so choose tomatoes that are fragrant and full of flavor.
Next, slice up a cucumber, a small red onion, thinly sliced into half-rings that will mellow slightly in the dressing. End with a green bell pepper, sliced into rings for a bit of crunch and color.


Scatter in about half a cup of Kalamata olives—they will give the salad its unmistakable Greek character.
Here’s where it gets authentic: instead of crumbling the feta cheese, we leave it in one glorious 200g (7 oz) block, perched proudly on top of the vegetables. It’s how the Greeks do it, and it makes for a striking presentation.


For the dressing, we keep things minimal yet bold. Drizzle the whole salad generously with extra virgin olive oil—the good stuff—and a tablespoon of red wine vinegar.
Sprinkle over a teaspoon of dried oregano, and finish with a pinch of salt and freshly ground black pepper.

Serve this salad straight away, ideally with some crusty bread on the side. No need to toss everything together—just let each diner break off bits of feta and scoop up the vegetables as they please.

Greek Salad (Village Salad or Horiatiki Salata)
Ingredients
- 4 medium ripe tomatoes cut into wedges
- 1 cucumber sliced into rounds or half-moons
- 1 small red onion thinly sliced
- 1 green bell pepper sliced into rings
- ½ cuo Kalamata olives
- 200 grams (7 oz) block of feta cheese
- 4-6 tbsp olive oil extra virgin
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- Combine the tomatoes, cucumber, onion, and bell pepper in a large bowl.
- Add the Kalamata olives and gently toss everything together.
- Place the block of feta cheese on top of the salad.
- Drizzle with olive oil and red wine vinegar.
- Sprinkle with dried oregano, salt, and pepper.
- Serve immediately, with crusty bread on the side, if desired.
