Let’s be real — not all of us have hours (or days!) to spend in the kitchen for Thanksgiving. I’m a busy solo mom juggling four blogs, running food tours, and managing other businesses here on my little corner of Crete.
As much as I love cooking (and eating!) all the festive foods, the truth is I don’t have time to slow-roast turkeys for half a day or scroll through endless recipe boards wondering what’s actually worth making and will make everyone happy.

So, one night — between answering tour emails, editing photos for My Cretan Recipe, and reminding my 19-year-old (for the third time) that eating leftover souvlaki straight from the fridge at midnight does not count as dinner — I went through my massive list of quick and easy holiday recipes.

FAST (& GOOD) MAIN DISHES
1. One-Pan Herb Roasted Turkey Breast
Hands-on time: 15 min | Total: ~1 hr

Ingredients:
- 1.5 kg skinless turkey breast
- 500 g baby potatoes, halved
- 300 g carrots, cut into chunks
- 2 tbsp olive oil
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- 1 tsp sea salt
- ½ tsp black pepper
- 3 garlic cloves, minced
Instructions:
- Preheat oven to 190°C (~375°F).
- Toss potatoes and carrots with half the olive oil, half the herbs, and half the garlic.
- Rub the turkey breast with remaining olive oil, herbs, garlic, salt, and pepper.
- Arrange the vegetables on a baking sheet and place the turkey breast on top.
- Roast for about 1 hour and 10 minutes, or until the turkey reaches 75°C internally.
- Let the turkey rest for 10 minutes before slicing and serving.
>> I tried to make this recipe faster by using a skinless turkey. If you decide to cook it with the skin, keep it in the oven for at least 10 more minutes because the absence of skin usually slows heat penetration.
2. Cretan-Style Lemon & Olive Oil Roast Chicken
Hands-on time: 10 min | Total: ~50 mi

Ingredients:
- 1.5 kg whole chicken, skin-on or skinless as you prefer
- 3-5 tbsp extra virgin olive oil
- 2 lemons (zest and juice)
- 4 garlic cloves, minced
- 2 tsp dried oregano (or fresh if available)
- 1 tsp dried thyme
- 1 tsp sea salt
- ½ tsp black pepper
- 200 ml water or chicken broth
- Fresh rosemary sprigs (optional)
Instructions:
- Preheat your oven to 190°C (~375°F).
- In a small bowl, mix the olive oil, lemon zest, and juice with the minced garlic, oregano, thyme, salt, and pepper.
- Pat the chicken dry and rub the lemon-olive oil mixture all over the chicken, inside and out.
- Place the chicken in a roasting pan, add the water or broth to the pan, and tuck some rosemary sprigs around the chicken if using.
- Roast for about 1 hour 20 minutes to 1 hour 30 minutes, or until the internal temperature reaches 75°C (165°F).
Baste occasionally with the pan juices. - Let the chicken rest for 10 minutes before carving and serving.
3. Greek Stuffed Turkey Breast Roll
Hands-on time: 20 min | Total time: ~1 hr 10 min (including roasting and resting)

Ingredients:
- 1.2 kg turkey breast, butterflied and pounded thin
- 150 g crumbled feta cheese
- 100 g spinach, sautéed and drained
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh oregano, chopped (or 1 tsp dried)
- Salt and pepper to taste
- Kitchen twine or toothpicks to secure
Instructions:
- Preheat oven to 190°C (375°F).
- In a pan, heat 1 tbsp olive oil and sauté the onion and garlic until they’re soft.
Mix in the sautéed spinach, oregano, salt, and pepper.
Let cool slightly. - Spread the spinach mixture evenly over the flattened turkey breast.
Sprinkle the crumbled feta on top. - Carefully roll the turkey breast tightly and secure with twine or toothpicks.
- Rub the outside with remaining olive oil, salt, and pepper.
- Place on a roasting tray and roast for 45–50 minutes or until the internal temperature reaches 75°C (~165°F).
- Let the roll rest for 10 minutes before slicing into thick rounds.

4. Garlic and Parmesan Mashed Cauliflower
Hands-on time: 15 min | Total time: 20 min

Ingredients:
- 1 large head of cauliflower (about 700 g), cut into florets
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 50 g grated Parmesan or Cretan Graviera cheese
- 50 ml heavy cream or milk
- Salt and pepper to taste
- Fresh chives or parsley, chopped (optional for garnish)
Instructions:
- Steam or boil the cauliflower florets until they’re very tender, about 10–12 minutes.
- Drain well and transfer to a food processor or blender.
- Add the butter and garlic as well as the cheese of your choice and the heavy cream.
- Blend until it’s smooth and creamy, adding extra cream or milk if needed. Alternatively, you can add a drizzle of olive oil.
- Season with salt and pepper.
- Garnish with fresh herbs if using, and serve warm.
5. Roasted Butternut Squash with Cinnamon and Herbs
Hands-on time: 10 min | Total time: 30 min

Ingredients:
- 600 g butternut squash, peeled and cubed
- 2 tbsp extra virgin olive oil
- 1 tsp ground cinnamon
- 1 tsp fresh thyme leaves (or ½ tsp dried)
- ½ tsp sea salt
- ¼ tsp black pepper
Instructions:
- Preheat the oven to 200°C (~400°F).
- Toss the butternut squash cubes with the olive oil and season with enough cinnamon, thyme, salt, and pepper.
- Spread on a baking sheet in one layer.
- Roast for 25–30 minutes, tossing halfway through, until tender and caramelized.
6. Potato and Sage Gratin
Hands-on time: 20 min | Total time: 50 min
Ingredients:
- 700 g potatoes, peeled and thinly sliced >> If you slice them thinly enough (about 2-3 mm thick), they will cook through in the oven as they bake in the warm milk or cream mixture, so you won’t need to boil them first.
- 300 ml whole milk or cream
- 2 garlic cloves, minced
- 1 tbsp fresh sage, chopped
- 75 g grated gruyère (I use Cretan Graviera) or cheddar cheese
- 1 tsp sea salt
- ½ tsp black pepper
Instructions:
- Preheat your oven to 180°C (~350°F) to ensure it’s ready when the dish is prepared.
- In a saucepan, gently warm the whole milk or cream over low heat.
Add the minced garlic and chopped fresh sage, then season the mixture with sea salt and black pepper.
Let the flavors infuse for a few minutes without boiling. - Lightly grease a baking dish to prevent sticking.
Arrange the thinly sliced potatoes in the dish, overlapping them slightly to create an even layer. - Carefully pour the warm milk and herb mixture over the potatoes, allowing it to seep between the slices.
- Evenly sprinkle the grated gruyère (or Cretan Graviera) cheese on top, which will melt and form a delicious golden crust.

Ingredients:
- 500 g Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 2 tbsp of pure maple syrup
- ½ tsp sea salt
- ¼ tsp black pepper
- 50 g pecans, roughly chopped
- 1 tbsp balsamic vinegar (optional, for drizzling)
Instructions:
- Preheat the oven to 200°C (~400°F).
- Toss the Brussels sprouts with olive oil, maple syrup, salt, and pepper.
- Spread on a baking tray covered with parchment paper in a single layer.
- Roast for 25 minutes, tossing halfway through, until everything looks caramelized and tender.
- In the last 5 minutes, sprinkle a few pecan nuts on the baking tray to toast lightly.
- Drizzle with balsamic vinegar before serving.

8. Personal Spiced Apple Crisp Bowls
Hands-on time: 15 min | Total: ~40 min

Ingredients:
- 500 g peeled and sliced apples (about 4 medium apples)
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tbsp lemon juice
- 75 g rolled oats
- 50 g all-purpose flour
- 50 g light brown sugar
- 50 g cold unsalted butter, cubed
- Pinch of salt
- Crushed almonds to garnish
Instructions:
- Preheat your oven to 180°C (~350°F).
- In a bowl, toss the sliced apples with lemon juice, brown sugar, cinnamon, and nutmeg.
- Divide the apple mixture evenly into 4 small oven-safe bowls or ramekins.
- In another bowl, mix the oats with the flour, the light brown sugar, and the salt.
Add the cold butter cubes and rub with your fingers until the mixture forms coarse crumbs. - Sprinkle the oat crumble evenly over the apples in each bowl.
Add a few pieces of apple on top. - Place the bowls on a baking tray (to catch any drips) and bake for 35-40 minutes until the topping is golden and the apples are tender and bubbly.
- Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream and crumbled almonds.
9. Cinnamon Sugar Puff Pastry Twisted Rings
Hands-on time: 10 min | Total time: ~25 min

Ingredients:
- 1 sheet of puff pastry (about 250g), thawed
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
- 1 tbsp melted butter

- Preheat your oven to 200°C (~380°F) and line a baking tray with parchment paper.

Ingredients:
- 1.5 liters of apple cider
- 3 cinnamon sticks
- 4 cloves
- 1 orange, sliced
- 1 lemon, sliced
- Thin apple slices or cinnamon sticks to decorate the mugs.
Instructions:
- Combine the cider with the spices and the fruit in a large pot.
- Simmer gently for 15-20 minutes.
- Remove from the heat and strain the punch through a fine sieve to remove the spices and fruit. .slices
