5-Minute Cocoa Cake: Fluffy, Quick, and Butter-Free

A super soft, easy cocoa cake that comes together in just a few minutes—perfect for breakfast, an afternoon snack, or as a base for your favorite creamy fillings.

This 5-Minute Cocoa Cake is one of those recipes that I keep coming back to whenever I need a quick, reliable dessert or cake base. It’s super fast to make and it always turns out right!

The recipe that came to me from my grandma was originally different, and over time, I’ve made a few tweaks to make it better: I slightly reduced the oil and sugar so it’s lighter and perfectly balanced.

For me, this is a versatile cake that works wonderfully for breakfast or a snack, and it also pairs beautifully with creamy fillings like the Mascarpone Cheese Cream I often prepare. The cake is soft enough to layer with creams for desserts, but simple enough to enjoy on its own with just a dusting of powdered sugar.

How I Make This 5-Minute Cocoa Cake

Ingredients.

The magic of this cake is in its simplicity. First, I combine the eggs, milk, oil, and vanilla extract in a mixing bowl and whisk them together until smooth.

Mix the wet ingredients.
Mix the dry ingredients.

In another bowl, I sift together the flour, cocoa powder, and baking powder, then mix in the sugar. I pour the dry ingredients into the wet and whisk everything until the batter is uniform and free of lumps.

Whisk everything until it’s smooth.
Pour into a cake baking pan.

I lightly grease and flour a 22 cm silicon cake pan, pour in the batter, and bake at 180 °C for about 30–35 minutes. Always check with a knife or a toothpick to make sure the cake is fully cooked.

… and it’s ready!

Once baked, I let the cake cool slightly in the pan, then remove it and leave it to cool completely. From here, it can be enjoyed simply dusted with powdered sugar, or sliced and layered with this delicious Mascarpone Cheese Cream, or simple whipped cream, Nutella, dulce de leche, or pistachio cream.

  • 1 Springform pan, or silicon pan 22 cm diameter

Ingredients
  

  • 200 grams all-purpose flour
  • 50 grams unsweetened cocoa powder
  • 160 grams sugar
  • 1 tsp baking powder (about 10 g)
  • 2 eggs
  • 75 ml neutral oil
  • 180 ml milk
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions
 

Prepare the wet ingredients: 

  • Put the eggs in a mixing bowl, add the milk, oil, and vanilla extract, and whisk until well combined.

Prepare the dry ingredients: 

  • In another bowl, sift together the flour, cocoa powder, and baking powder. Add the sugar and mix well.

Combine: 

  • Pour the dry ingredients into the wet ingredients and whisk energetically until the batter is smooth and free of lumps.
  • Bake: 
  • Grease and flour a 22 cm springform pan. Pour in the batter.
  • Bake the cake at 180 °C for 30–35 minutes. Check doneness with a toothpick
  • Let the cake cool slightly, remove from the pan, and let it cool completely.

Mascarpone Cheese Cream

Description

A smooth, airy mascarpone cream perfect for chocolate cakes or served on its own.

Ingredients

  • 300 g mascarpone cheese
  • 2 eggs
  • 2 tbsp granulated sugar
  • Cocoa powder, for dusting
  • Optional: crushed nuts or small butter cookies for garnish

Procedure

  1. Put the eggs in a mixing bowl, add the sugar, and beat with electric whisks until pale and fluffy.
  2. In a separate bowl, soften the mascarpone with a spatula until smooth.
  3. Gently fold the mascarpone into the egg mixture using a spatula, moving from bottom to top to preserve the airy texture.
  4. Refrigerate the cream until ready to use.

Tip

Works wonderfully as a filling for any chocolate cake. Store in an airtight container in the fridge for 2–3 days.

Make it yours:

  • Use it as a base for layered desserts with mascarpone cream, Nutella, or pistachio cream.
  • Dust with cocoa powder or powdered sugar for a simple presentation.
  • Store at room temperature for up to 3 days in an airtight container. Take it to the fridge if you fill it with the cheese cream.
