Greek Bougiourdi Recipe: A Spicy, Cheesy Delight

What is Bougiourdi?

Bougiourdi is a traditional Greek meze (appetizer) made by baking feta cheese with tomatoes, peppers, olive oil, and spices.

When baked, the feta becomes irresistibly soft and creamy, and can even feature a delicious crust. The cheese blends well with the juicy tomatoes and spicy peppers. It’s best enjoyed hot with fresh bread or pita to scoop up all the melty goodness.

Ingredients You’ll Need to Make Bougiurdi

  • 200g (7 oz) feta cheese
  • 2-3 ripe tomatoes, diced
  • 1 small green chili pepper or red chili, finely sliced (adjust heat to preference)
  • 1 small bell pepper, sliced (optional for added sweetness)
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (or more if you like it extra spicy!)
  • Extra virgin olive oil
  • Freshly ground black pepper to taste

Optional:

  • 1 clove garlic, minced (optional but recommended!)
  • ½ tsp smoked paprika (optional, but adds depth)
  • A few Kalamata olives (optional, for extra Mediterranean flair)

Instructions

  • Preheat the oven
    Set it to 375°F (190°C). If you’re using a traditional Greek clay pot (saganaki dish), even better!
  • Assemble the ingredients
    In a small ovenproof dish, place the block of feta in the center.
    Surround it with diced tomatoes and sliced peppers.
  • Season
    Sprinkle the oregano, red pepper flakes, black pepper, and smoked paprika over the feta and veggies.
    If using garlic, mince it finely and scatter it around.
  • Drizzle with abundant olive oil
    A good quality extra virgin olive oil is key to bringing out all the flavors. The more olive oil you use, the better the final result.
  • Bake until bubbly
    Pop it into the oven for about 15–20 minutes, or until the feta softens and the tomatoes are juicy.
  • Serve hot
    Grab some crusty bread or warm pita, and dig right in!

Tips & Variations to Perfect this Bougiourdi Recipe

  • Make it milder
    Skip the chili peppers and red pepper flakes for a gentler version.
  • Add some meat
    Toss in a few slices of spicy Greek sausage (loukaniko) for a heartier dish. This is one of my kids’ favorites and a recipe that saves dinner on busy nights at home! In winter, I also combine it with pasta for a complete meal.
  • Try different cheeses
    While feta is the classic choice, you can experiment with a mix of feta and kasseri or graviera for a gooier texture. In Crete, you can also make it with myzithra cheese which makes the dish creamier and less salty.
