Fresh & Festive Thanksgiving Salads That Steal the Show

Thanksgiving is all about comforting dishes, but I always love adding a fresh touch to my table with salads that balance typical autumn ingredients. These Thanksgiving salad recipes bring color, crunch, and seasonal products like apples, squash, nuts, and berries, making them the perfect complement to your holiday feast.

For me, salads are more than just greens—they include seasonal fruits and vegetables, nuts, cheeses, and dressings that capture the flavors of every season. And fall salads are not different!

The salads I included in this Thanksgiving round-up add a fresh, crisp bite to balance heavier dishes and bring color and variety to the table.

Over time, these salads have become one of my favorite parts of any holiday meal, so here I propose them to you, in a fabulous Thanksgiving version!

Thanksgiving Salads

Try making these salads and add a touch of brightness to the table: A simple (and delicious) way to make your Thanksgiving meal unforgettable!

1. Kale & Apple Salad with Maple Vinaigrette

Chopped kale tossed with apples, toasted walnuts, and a maple dressing.

Ingredients:

  • 1 large bunch of kale, stems removed, leaves chopped
  • 2 crisp apples, thinly sliced
  • 1 cup walnuts, toasted
  • ½ cup dried cranberries
  • ½ small red onion, thinly sliced
  • 60 g (½ cup) crumbled feta cheese

For the Maple Vinaigrette

  • 60 ml (¼ cup) extra-virgin olive oil
  • 30 ml (2 tbsp) apple cider vinegar
  • 15 ml (1 tbsp) pure maple syrup
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions:

  • In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon, salt, and pepper until well combined.
  • Place the chopped kale in a large bowl.
    Drizzle with half the vinaigrette and massage gently for 1–2 minutes until the leaves soften.
  • Add the apple slices, the toasted walnuts, a few cranberries, the red onion, and the feta.
  • Drizzle with remaining vinaigrette and toss just before serving.

How to Prepare Kale

Remove the tough stems and chop the leaves. Add the kale to a large bowl, drizzle with a little olive oil and a squeeze of lemon (or a splash of vinegar), and then use clean hands to gently squeeze and rub the leaves for about 1–2 minutes — you want them softer and glossy but not mushy.

Massage until the leaves shrink slightly and taste mellow; stop when they’re tender but still have a little bite.

2. Roasted Beet & Goat Cheese Salad

Roasted beets bring earthy sweetness. I always prefer them paired with a tangy ingredient; thus, I picked goat cheese (Cretan myzithra works great). You can add a scattering of toasted nuts for crunch. A light balsamic vinaigrette ties it all together, making this a colorful (and tasty) salad.

Ingredients:

  • 3 medium beets, roasted, peeled, and sliced
  • 100g (3.5 oz) goat cheese, softened
  • 1/2 cup toasted pecans (or other nuts you prefer)
  • 4 cups mixed salad greens
  • 3 tbsp balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions:

  • Roast the beets in a 200°C (400°F) oven for 45–60 minutes until tender.
    Let them cool.
    Peel them and slice the beets into slices around 1 cm thick.
  • Arrange salad greens on a platter, and decorate with the beets
  • Using two spoons, shape the softened goat cheese into small quenelles and place them around the salad.
  • Crumble the pecans or any other nuts you have on top.
  • Whisk balsamic vinegar, olive oil, honey, salt, and pepper until smooth.
    Drizzle over the salad just before serving.

3. Brussels Sprout Slaw with Almonds, Bacon & Cranberries

A crunchy, colorful slaw made with thinly sliced Brussels sprouts, bacon, almonds, and sweet dried cranberries. Tossed in a Dijon-maple dressing, it’s the perfect mix of savory, sweet, and fresh.

Ingredients:

  • 500 g Brussels sprouts, trimmed and thinly sliced
  • 6 slices of bacon, cooked until crisp and crumbled
  • ½ cup dried cranberries
  • ¼ cup sliced almonds (optional, for extra crunch)
  • Extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp pure maple syrup
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper, to taste

Instructions:

  • In a large bowl, combine the thinly sliced Brussels sprouts with the bacon, the cranberries, and the almonds (if using).
  • In a small bowl, whisk together all the seasoning ingredients, including abundant olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper.
  • Pour the dressing over the slaw and toss until everything is well coated.
  • Let it sit for 10 minutes before serving to allow flavors to meld.

How to Shred Brussels Sprouts Evenly

Trim the stem and remove any loose outer leaves. For quick even shredding, slice the sprouts thinly across the grain with a sharp knife, or use a mandoline set to a fine setting. A food processor fitted with the slicing disc works well for larger batches — pulse gently so pieces stay tender, not mushy.

Quick tip: slice larger sprouts in half first so all pieces cook evenly.

4. Squash, Quinoa & Pomegranate Salad

Roasted squash cubes with quinoa, pomegranate seeds, fresh spinach, and creamy feta — a colorful salad that’s hearty yet fresh, perfect for a Thanksgiving side.

Ingredients:

  • 500 g (about 4 cups) butternut squash, peeled and cubed
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 2/3 cup pomegranate seeds
  • 1/2 cup feta cheese, crumbled
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup fresh parsley, chopped

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • ½ tsp ground cumin
  • Salt & pepper, to taste

Instructions:

  • Preheat the oven to 200°C (400°F) to roast the squash.
    Toss the squash cubes with olive oil, salt, and pepper.
    Spread on a baking sheet and roast for 20–25 minutes, or until tender and lightly caramelized.
  • Cook the quinoa: In a medium saucepan, bring the vegetable broth to a boil.
    Add the rinsed quinoa, reduce the heat, cover, and simmer for 15 minutes.
    Remove from the heat and let stand 5 minutes before fluffing with a fork.
  • Dressing: Whisk the olive oil with the lemon juice, the honey, and season with cumin, salt, and pepper in a small bowl until well blended.
    In a large bowl, combine the quinoa, the roasted squash, the spinach, the pomegranate seeds, the feta, and the parsley.
    Drizzle with dressing and toss gently to combine.
  • Serve slightly warm or at room temperature.

5. Roasted Carrot and Chickpea Salad

This salad has it all: roasted carrots and chickpeas paired with avocado, roasted cherry tomatoes, fresh dill, and baby spinach. All of it tossed in a zesty lemon-tahini dressing.

Ingredients:

  • 250g (2-3) carrots, peeled and cut into thick slices
  • 1 can (400g) chickpeas, drained and rinsed
  • 200g cherry tomatoes
  • 1 ripe avocado, cut into quarters or bite-sized slices
  • 2 cups baby spinach leaves
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 tbsp fresh dill, chopped
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 1 tbsp tahini (optional)

Instructions:

  • Preheat the oven to 200°C (400°F).
    Toss the carrots, chickpeas, and cherry tomatoes with olive oil, cumin, smoked paprika, salt, and pepper.
  • Spread on a baking sheet and roast for 25–30 minutes, turning once, until the carrots are tender and the tomatoes slightly blistered.
  • In a small bowl, whisk together lemon juice, garlic, tahini (if using), and a pinch of salt.
  • Combine the roasted vegetables, the diced avocado, baby spinach, and dill in a bigger bowl or serving dish.
  • Drizzle with dressing and toss gently to combine.
    Serve immediately.

6. Spinach, Dried Figs, and Parmesan Cheese Salad

A simple yet elegant salad combining fresh baby spinach with dried figs and shaved Parmesan cheese. Tossed in a light balsamic vinaigrette.

Ingredients:

  • 4 cups fresh baby spinach leaves
  • 100 g dried figs, halved
  • 50 g Parmesan cheese, shaved
  • 1/4 cup toasted walnuts (optional)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup
  • Salt and pepper, to taste

Instructions:

  • In a large bowl, combine the baby spinach with halved dried figs and toasted walnuts, if using.
  • Prepare the seasoning by whisking together olive oil, balsamic vinegar, honey, salt, and pepper until emulsified in a different bowl.
  • Drizzle the dressing over the salad and toss gently.
  • Top with shaved Parmesan cheese just before serving.

7. Brown Rice Harvest Salad

A wholesome salad featuring brown rice with green bell peppers, red peppers, and red beans. Tossed in a light maple-Dijon vinaigrette, it’s a fresh side for any festive table.

Ingredients:

  • 2 cups cooked brown rice (about 1 cup uncooked)
  • 1 cup green bell pepper, diced
  • 1 cup red bell pepper, diced
  • 1 cup cooked red beans (canned, rinsed and drained)
  • 1/4 cup fresh parsley, chopped
  • 2 green onions, thinly sliced

For the dressing:

  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp pure maple syrup
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions:

  • Cook the brown rice according to the package instructions and let it cool.
  • In a large bowl, whisk together the olive oil with the apple cider vinegar, and the maple syrup.
    Add the Dijon mustard, salt, and pepper.
  • Add the brown rice, together with the diced green and red bell peppers, the red beans, some chopped parsley, and green onions to the bowl.
  • Toss gently to combine all ingredients and coat with dressing.
  • Serve chilled or at room temperature.

8. Potato Salad with Pickled Cucumber and Red Onion

Potato salad brightened by pickled cucumbers and red onion. This dish features a simple and very light mustard-dill dressing. You can also make it Cretan style (>> here is the recipe).

Ingredients:

  • 1 kg potatoes, boiled and cut into bite-sized pieces
  • 1 cup pickled cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 3 tbsp mayonnaise
  • 2 tbsp plain Greek yogurt (optional for extra creaminess)
  • 1/4 cup olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • Salt and freshly ground black pepper, to taste

Instructions:

  • Boil the potatoes until just tender; drain and let them cool.
  • In a large bowl, mix the olive oil, the mayonnaise, and the Greek yogurt (if using)
    Add the Dijon mustard, dill, salt, and pepper to create the dressing.
  • Add the cooled potatoes, slices of pickled cucumber, and thinly sliced red onion to the bowl.
  • Gently toss everything together until every ingredient is evenly coated.
  • Refrigerate for at least 1 hour before serving to let flavors meld.

9. Apple and Celery Salad with Blue Cheese

A Waldorf-inspired salad with celery and green apples, walnuts, and blue cheese (I can eat tons of this salad just for the cheese!). Roquefort adds a bold, savory note, but you can easily swap it for Camembert, Danish blue, or Gorgonzola.

Ingredients:

  • 3–4 celery stalks, thinly sliced
  • 2 green apples, thinly sliced
  • 1/2 cup toasted walnuts, roughly chopped
  • 100 g Roquefort cheese, crumbled (or Camembert, Danish blue, or spicy Gorgonzola)
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey or maple syrup
  • Salt and freshly ground black pepper, to taste

Instructions:

  • Whisk together the olive oil with the lemon juice.
    Add the honey, salt, and pepper to make the dressing.
  • Thinly slice celery and apples.
  • In a large bowl, combine the celery, the apples, and some toasted walnuts (crushed by hand).
    Crumble the blue cheese over the salad.
  • Drizzle dressing on top and gently toss to combine, being careful not to break up the cheese too much.
  • Serve immediately to enjoy the crisp texture and bold flavor contrast.

10. Cretan-Style Autumn Salad with Myzithra, Olives and Paximadia

Let’s honor your Cretan roots (or simply celebrate your love for Crete) with this rustic Cretan-style salad. It has boiled potatoes, red cabbage, Kalamata or Cretan olives, and cucumbers (or pickled cucumbers). A touch of traditional paximadia (Cretan barley rusks) brings the crunch. Dressed simply with lemon and olive oil, it’s a beautiful, flavorful side with a Greek island twist.

Ingredients:

  • 4 medium potatoes, boiled and cubed
  • 1 small head of red cabbage, thinly sliced
  • 1 cucumber, sliced (or use pickled cucumbers for tang)
  • 100 g (3.5 oz) myzithra cheese (or ricotta/goat cheese), crumbled
  • 100 g (3.5 oz) Kalamata or Cretan olives, pitted
  • 2–3 paximadia (Cretan barley rusks), broken into bite-sized pieces
  • Fresh oregano or thyme, for garnish
  • Salt & pepper, to taste

Dressing

  • 60 ml (¼ cup) olive oil
  • 2 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • Salt & pepper, to taste

Instructions:

  • Prepare the dressing by whisking the olive oil with the lemon juice, and add the garlic, salt, and pepper until well combined.
  • Boil the potatoes until tender, then cube once cooled slightly. I prefer to leave the skin on for a more rustic style, but you’re free to peel them.
  • Thinly slice red cabbage and cucumber (or drain pickled cucumbers since they’re not so easy to find in the fall).
  • In a large bowl, combine potatoes, cabbage, cucumber, olives, and a few spoonfuls of myzithra cheese.
  • Just before serving, add broken paximadia pieces and gently toss to mix, keeping them crunchy.
  • Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  • Garnish with fresh oregano or thyme before serving.
