Ingredients

  • 1 cucumber, finely chopped
  • 1/2 cup olives, pitted and chopped

Procedure

Ingredients

  • 1 carrot, grated
  • 1 block halloumi cheese, cubed

Procedure

6. Cucumber and Chickpea Salad with Tahini Dressing

Ingredients for the salad

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large cucumber, diced
  • 1 medium red onion, thinly sliced
  • ½ cup fresh parsley, chopped
  • ¼ cup crumbled feta cheese (optional)

For the tahini dressing

  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil

  • Water, to thin the dressing (start with 2 tablespoons)
  • Salt and pepper to taste

Procedure

  • In a large bowl, combine the chickpeas, diced cucumber, sliced red onion, and chopped parsley. If using feta cheese, add it to the bowl as well.
  • In a small bowl, whisk together tahini, lemon juice, olive oil, maple syrup (if using), and minced garlic.
