Step-by-Step: How to Make Greek Yogurt Banana Bread with Nuts and Chocolate

Ingredients. Note that I always add 2 tablespoons of grated coconut for extra flavor, which you can skip.

To begin, preheat your oven to a moderate temperature—perfect for baking quick breads. Prepare your loaf pan by lining it with parchment paper, letting the ends hang over the sides. Lightly coat the parchment with cooking spray to ensure nothing sticks.

I often spray the tray with vegetable oil before and after adding the parchment paper to protect the tray and ensure perfect results.

Now, grab two bowls—one for the dry ingredients and one for the wet ones. In the larger of the two, whisk together your dry base: flour, two kinds of sugar (white and brown for a deeper flavor), baking soda to help it rise, and just a pinch of salt for balance.

In the second bowl, start building your wet mixture. Take your ripe bananas (with plenty of brown speckles for maximum sweetness) and mash them thoroughly until smooth. To this banana mash, add a scoop of Greek yogurt, a couple of eggs, a bit of olive oil, and a splash of vanilla extract.

Pour the wet mixture into the bowl of dry ingredients. Stir gently, just until the ingredients are combined, without overmixing. Add in your choice of chopped nuts and chocolate chips to elevate the loaf.

Ingredients
  

  • 2 cups all-purpose flour
  • ½ cup sugar
  • ¼ cup packed light brown sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 or 3 very ripe, darkly specked bananas mashed well (about 1 ½ cups)
  • ¼ cuo plain Greek yogurt nonfat or regular
  • 2 large eggs
  • ¼ cup olive oil extra virgin
  • 2 ½ tsp vanilla extract
  • ½ cup chopped walnuts or pecans
  • ½ cup dark chocolate chips

Instructions
 

  • Preheat the oven to 350°F. Line a 9-inch loaf pan with parchment paper (overhanging on the two long sides) then grease the parchment paper with cooking spray.
  • In a large bowl, whisk together the flour, sugar, brown sugar, baking soda, and salt.
  • In a separate medium bowl, whisk together the mashed bananas, eggs, Greek yogurt, olive oil, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until combined. Stir in the chopped nuts and chocolate chips.
  • Scrape the batter into the prepared loaf pan.
  • Bake for 50 to 60 minutes, or until a toothpick (or clean knofe) inserted into the center comes out clean.
  • Remove from the oven and allow to cool completely in the pan. Use the parchment paper overhangs to lift the bread out, then slice and serve.
