Crete has a way of turning simple ingredients into unforgettable flavors — and these cookies are no exception. Inspired by traditional Cretan baking, they bring together buttery dough, toasted almonds, and chocolate in a way that feels rustic, comforting, and unmistakably festive. The cookie itself is soft and lightly sweet, a perfect backdrop for the toppings that make it unique.

Unlike typical chocolate chip cookies, where everything is mixed into the dough, these cookies enhance their ingredients and make them visible.

The crushed almonds and chocolate chips are pressed right onto the top before baking, giving the cookies that artisanal, bakery-style look.

The almonds toast as they bake, filling the kitchen with a warm aroma that pairs beautifully with the melting chocolate.

Some home bakers in Crete add a thin layer of chocolate to the base once the cookies cool — not a full dip, just a delicate kiss of richness that adds a subtle contrast and makes the cookies feel even more special. The cookie is simple, rustic, and deeply satisfying.

These are wonderful on holiday trays, especially among more ornate cookies. They are a reminder that festive baking doesn’t have to be complicated. And because they’re not overly sweet, they pair beautifully with Greek coffee, tea, or even a glass of warm spiced wine.

If you love cookies with real texture and real flavor, these will become one of your holiday favorites — a little taste of Crete wrapped in chocolate and almonds.

How I Make Them

I start by creaming the butter and sugar until pale and fluffy, which gives these cookies their soft, tender texture. The egg is mixed in gently, just until incorporated, followed by the dry ingredients folded in to form a smooth but slightly rustic dough.

Cream the butter and the sugar.

Once the dough is ready, I shape it into small balls and place them on a lined baking tray, leaving space for a little spreading.

You can add some chocolate chips to the mix. However, instead of mixing the almonds and chocolate into the dough, I prefer pressing them gently onto the tops of the cookies. This is what gives them that traditional, bakery-style look and allows the almonds to toast beautifully while baking.

The cookies bake quickly and should be removed while still soft — they’ll finish setting as they cool. Once completely cooled, I sometimes add a thin layer of melted chocolate to the base for a subtle extra richness, but this step is optional and very much a baker’s choice.

They’re best enjoyed once the chocolate has fully set, paired with Greek coffee or tea, when the flavors truly shine.

Tips for Super Delicious Cookies

  • Toast the almonds lightly before adding them; it deepens the flavor.
  • Press toppings firmly so they stay in place during baking.
  • Don’t overbake: They should stay soft, not crispy.
  • Optional chocolate base: Spread a thin layer of melted chocolate on the bottom once cooled.
  • Use high-quality chocolate chips for the best flavor.

Variations

  • Orange zest dough
Add grated orange zest to the dough for Mediterranean brightness.
  • Sesame twist
Sprinkle a few toasted sesame seeds on top for extra crunch.
  • Darker chocolate
Use chopped dark chocolate chunks instead of chips.
  • Honey drizzle
A tiny swirl of honey after baking adds a traditional Cretan aroma.
  • Cinnamon almonds
Toss almonds with a pinch of cinnamon before topping.
