The cinnamon filling is mixed separately, then spooned carefully into each thumbprint. As the cookies bake, the filling melts into the dough, forming that signature swirl. I remove them from the oven while still pale and soft, letting them finish setting as they cool.

Once cooled, they’re ready as they are — or lightly dusted with powdered sugar for a festive finish.

Cinnamon Swirl Thumbprint Cookies
Ingredients
- 115 grams butter softened
- 100 grams sugar
- 1 egg
- 1 tsp vanilla extract
- 220 grams all-purpose flour
- 1-2 tsp cinnamon powder
- 70 grams brown sugar
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- Cream the butter and sugar until light and fluffy.
- Add the egg and vanilla and mix until combined.
- Stir in the flour to form a soft dough.
- Roll into small balls and place on the tray.
- Press a thumbprint into the center of each cookie.
- Mix cinnamon and brown sugar and spoon into each indentation.
- Bake for 10–12 minutes, until set but still soft.
- Cool on a rack before serving.
