Crafting the Tomato Bread – A Mediterranean Ritual
To prepare this rustic tomato bread the Cretan way, begin with slices of country-style bread. Ideally, the loaf should be dense with a firm crust—something that can stand up to juicy toppings without becoming soggy. Drizzle the bread with olive oil and sprinkle with oregano.


Toast the bread lightly, just enough to create a golden, crisp surface that will enhance the overall texture.
Once the slices are warm and toasted, take a raw garlic clove and rub it gently over one side of each slice. This simple step infuses the bread with a subtle, savory heat, marrying beautifully with the sweet acidity of fresh tomato.
Alternatively, and this is the way I prefer to do it, grate the garlic inside the tomato and let the flavors combine for a few minutes; this way, the flavor will be more intense.


Use fully ripe tomatoes, bursting with flavor, and at their seasonal peak. Cut them in half and grate them over a bowl, using a box grater to capture only the pulp while leaving the skins behind. The resulting mixture should be loose, fresh, and vibrant—a raw tomato purée that doesn’t need any cooking.
Spoon the grated tomato generously over the bread. Then, drizzle a robust stream of extra virgin olive oil across the top, allowing it to soak slightly into the bread and round out the flavors. Another pinch of dried oregano adds an earthy, herbal lift, while a touch of salt balances everything out.


This isn’t a dish to prepare in advance—it’s best enjoyed immediately, while the bread is still crisp and the tomatoes are fresh and cool against the warmth of the toast.
Serving Ideas: What to Pair with Cretan Tomato Bread
