Working with phyllo can be an art, as it requires careful handling to prevent tearing. Some pies use puff pastry, which is thicker and offers a buttery, flaky texture. In rural areas, handmade dough or thicker phyllo-like sheets called “horiatiko” are also popular, providing a rustic, hearty feel to the pies.

1. Spanakopita (Spinach Pie)

- 500g fresh spinach, washed and chopped

- 2 eggs, beaten
- 1/4 cup dill, finely chopped
- 1/4 cup parsley, finely chopped
- 3 green onions, chopped
- Salt and pepper to taste
Procedure
- Sauté the spinach and green onions in a bit of olive oil until wilted.
- Allow to cool.
- Mix the spinach mixture with feta, eggs, dill, parsley, salt, and pepper.

- 150g feta cheese
- 1/4 cup dill
- 1/4 cup olive oil
- Salt and pepper to taste
Procedure
- Blanch the greens, drain, and chop finely.
- Mix with feta, dill, olive oil, salt, and pepper.
- Layer with phyllo or puff pastry and bake until golden.
3. Anamikta (Mixed Filling Pie)

Ingredients
- 200g feta cheese
- 100g ricotta cheese (if you cannot find Cretan myzithra, ricotta can be a good replacement)
- 2 cups spinach (squeezed dry)
- 1/2 cup chopped mint
- 1/4 cup grated Parmesan
- 2 eggs, beaten
- Salt and pepper
Procedure
- Combine all ingredients in a bowl.
- Spread the mixture evenly in the pastry of your choice.
- Bake until golden brown and serve warm.
4. Tiropita (Cheese Pie)

Ingredients
- 300g feta cheese
- 150g kefalotyri or grated hard cheese
- 2 eggs, beaten
- 1/4 cup yogurt
- Optional: Make it more delicious with a few pieces of tiromalama cheese from Crete (or any other cheese that melts easily)
Procedure:
- Mash the feta and mix with other cheeses, eggs, and yogurt.
- Place between layers of phyllo pastry and bake.
- Let it cool a little before cutting into portions for the cheese to harden a bit.
5. Kotopita (Chicken Pie)

Ingredients
- 300g cooked chicken, shredded or cut into small pieces
- 1 cup béchamel sauce
- 1/2 cup grated cheese (e.g., kefalotyri)
- 1/2 cup mushrooms, sautéed
- 1/2 cup mixed veggies (carrot, leek, zucchini… or whatever you have in the fridge!)
- Salt, pepper, and nutmeg
Procedure
- Mix the chicken, béchamel, mushrooms, diced vegetables, and cheese.
- Season with salt, pepper, and nutmeg.
- Use as filling for pastry and bake until golden.
6. Kreatopita (Meat Pie)

Ingredients
- 500g ground beef or lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup red wine
- 1/2 cup tomato paste
- 1/4 cup parsley, chopped
- Salt, pepper, cinnamon, and allspice
Procedure
- Sauté the onion and garlic, then add the meat and cook until browned.
- Deglaze with wine and add tomato paste, spices, and parsley.
- Simmer until thickened.
- Cool and use as filling for pastry.
7. Prasopita (Leek Pie)

Ingredients
- 4 large leeks, chopped
- 150g feta cheese
- 2 eggs
- 1/4 cup dill
- Olive oil, salt, and pepper
Procedure

8. Melopita (Honey Pie)

Ingredients
- 300g ricotta, myzithra, or anthotyro cheese
- 1/4 cup honey

- 1 tsp cinnamon
- Zest of 1 lemon

- Mix all ingredients until smooth.
- Try to use the cheese at room temperature.
- Give fragrance with finely grated lemon zest.
- Pour into a tart shell or phyllo pastry and bake until set.

9. Vegetable Pie

Ingredients
- 1 cup diced zucchini
- 1 cup diced eggplant
- 1/2 cup chopped bell peppers
- 1/2 cup crumbled feta
- Olive oil, salt, and oregano
Procedure
- Sauté the vegetables in olive oil until tender.
- Let cool.
- Mix with feta and seasonings.

- Use as filling and bake until golden.
