Greek cabbage dishes often emphasize fresh, simple ingredients enhanced with local ingredients such as olive oil, lemon, garlic, herbs, and occasionally feta.

Cabbage can be stuffed (lahanodolmades), sautéed with tomatoes, or baked into pies and casseroles. Its slightly sweet, earthy flavor pairs well with grains, legumes, or meat, making it a versatile addition to any kitchen.

1. Lahanodolmades (Stuffed Cabbage Rolls)

Ingredients:

  • 1 large cabbage
  • 1 cup rice, rinsed
  • 250 g ground beef or lamb (optional)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • Salt and pepper

Preparation:

  • Blanch the cabbage leaves in boiling water until they’re soft (about 3-4 minutes) and drain them on kitchen paper towels.
  • Sauté the onion and the garlic in olive oil.
  • Mix with the rice, minced meat (if using), oregano, salt, and pepper.
  • Place some filling on each cabbage leaf and roll tightly.
  • Arrange the rolls in a pot, cover with water and lemon juice, and simmer 45–50 minutes until cooked.

    >> Serve with a generous quantity of avgolemono sauce.

    2. Cabbage & Chickpea Stew

    Ingredients:

    • 400 g cooked chickpeas
    • 1 small cabbage, chopped
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 3 tbsp olive oil
    • 1 can (400 g) chopped tomatoes
    • 1 tsp dried oregano
    • Salt and pepper

    Preparation:

    • Heat the olive oil in a pot and sauté the onion and garlic until they are soft and translucent.
    • Add the tomatoes, chickpeas, cabbage, oregano, salt, and pepper.
    • Simmer 20–25 minutes until the cabbage is tender and flavors meld.

      This is a healthy, filling vegetarian meal that’s perfect on its own or to accompany any chicken or meat dish.

      3. Cabbage Pie (Lahanopita)

      Ingredients:

      • 1 small cabbage, shredded
      • 1 onion, chopped
      • 200 g feta, crumbled
      • 2 eggs
      • 1 sheet phyllo pastry
      • 3 tbsp olive oil
      • Salt and pepper

      Preparation:

      • Preheat the oven to 180 °C (350 °F).
      • Sauté the onion and cabbage in olive oil until soft. Cool slightly and set aside.
      • Mix in the feta and the eggs.
      • Line a baking dish with phyllo, pour the filling, cover with another phyllo layer, and brush with olive oil.
      • Bake for 30–35 minutes until golden and serve.

        This is a savory, cheesy pie that’s perfect as a snack, lunch, or light dinner.

        4. Braised Cabbage with Lemon & Olive Oil

        Ingredients:

        • 1 small cabbage, chopped or cut in half
        • 1 onion, sliced
        • 3 cloves garlic, minced
        • 4 tbsp olive oil
        • Juice of 1 lemon
        • ½ tsp dried oregano
        • Salt and pepper

        Preparation:

        • Heat the olive oil in a pan, sauté the onion and garlic until fragrant.
        • Add the cabbage and season with oregano, salt, and pepper.
        • Cook over low heat, stirring occasionally, 20–25 minutes until tender.
        • Finish with a squeeze of lemon juice and an extra drizzle of olive oil.

          5. Cabbage & Tomato Casserole

          Ingredients:

          • 1 small cabbage, chopped
          • 2 tomatoes, chopped, or 1 can diced tomatoes
          • 1 onion, chopped
          • 3 tbsp olive oil
          • 1 tsp dried oregano
          • 1 tsp sugar (optional)
          • Salt and pepper

          Preparation:

          1. Preheat the oven to 180 °C (350 °F).
          2. Sauté the onion in olive oil until soft and translucent.
          3. Mix in the cabbage, the tomatoes, and season with oregano, salt, and pepper.
          4. Transfer to a baking dish, cover, and bake for 30–35 minutes until cabbage is tender.
          5. Optional: sprinkle with feta before serving.

          6. Cabbage & Lentil Stew

          Ingredients:

          • 200 g lentils
          • 1 small cabbage, chopped
          • 1 onion, chopped
          • 2 cloves garlic, minced
          • 3 tbsp olive oil
          • 1 tsp dried oregano
          • 1 can (400 g) chopped tomatoes
          • Salt and pepper

          Preparation:

          • Sauté the onion and garlic in olive oil.
          • Add the tomatoes, the lentils, and the cabbage.
          • Season with oregano, salt, and pepper.
          • Cover with water and simmer for 25–30 minutes until the lentils and cabbage are tender.

          7. Cabbage with Carrots and Vinegar (Λάχανο με Καρότο)

          Ingredients:

          • 1 small cabbage (about 500 g / 1 lb), shredded
          • 2 medium carrots, julienned or grated
          • 3 tbsp extra virgin olive oil
          • 2–3 tbsp red wine vinegar (or apple cider vinegar)
          • 1 small onion, finely sliced (optional)
          • Salt and freshly ground black pepper, to taste
          • Fresh parsley, chopped, for garnish

          Preparation:

          • Rinse the cabbage and remove the tough core. Shred finely.
          • Peel and julienne or grate the carrots.
          • Slice the onion if using.
          • Heat the olive oil in a large skillet or sauté pan over medium heat. Add the onion (if using) and cook for 2–3 minutes until soft.
          • Add the cabbage and carrots, stir to combine, and cook for 5–7 minutes until the cabbage softens slightly but still has a little crunch.
          • Remove from heat. Stir in the vinegar, and season with salt and pepper. Toss gently to combine and let it sit for 2–3 minutes so the flavors meld.
          • Transfer to a serving dish, drizzle with a little more olive oil if desired, and sprinkle with fresh parsley. Serve warm, at room temperature, or even slightly chilled.

          This simple Greek side dish is a staple on tables across the country. Shredded cabbage and sweet carrots are sautéed briefly, then finished with vinegar and olive oil. Perfect side dish for any type of meat.
