Preheat the oven

Preheat your oven to 325°F (165°C). Grease and line the bottom of a cheesecake pan with parchment paper to prevent sticking.

Prepare the crust

In a small bowl, combine the graham cracker crumbs and melted butter. Mix well until the crumbs are evenly coated in butter.

Prepare the pan

Press the mixture into the bottom of the cheesecake pan to form an even crust. Use the back of a spoon to press it down firmly. Place the pan in the oven and bake for about 10 minutes or until lightly golden brown. Set aside to cool.

Make the filling

In a large bowl, beat together the Greek yogurt, softened cream cheese, and sugar until smooth and creamy. Make sure there are no lumps, and the mixture is fully combined.

Add eggs, lemon zest, and vanilla

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until incorporated, and add the lemon zest.

Pour the Filling

Once the crust has cooled slightly, pour the yogurt and cream cheese filling over it. Use a spatula to smooth the top, ensuring it is evenly distributed.

Bake the Cheesecake

Place the cheesecake in the preheated oven and bake for 40-45 minutes. The center should be set but slightly wobbly when you gently shake the pan.

Cool and Chill

Once done, remove the cheesecake from the oven and let it cool to room temperature. Afterward, place it in the refrigerator for at least 4 hours or overnight to allow it to firm up and chill completely.

Serve and Enjoy

Once chilled, slice the cheesecake and serve. You can top it with fresh fruit, a drizzle of honey, or even a dollop of whipped cream if desired. Enjoy your lighter, tangier cheesecake!
