Start by preheating your oven to 350°F (175°C) and lining a muffin tin with paper liners, or gently grease it. After that, continue by mixing the wet ingredients.
In a medium bowl, whisk together the Greek yogurt, sugar, milk, melted butter, egg, and vanilla extract until smooth and well combined.

Combine the dry ingredients by mixing the flour, baking powder, baking soda, and salt in another bowl. And then, gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix, as this can result in dense muffins.
Using a spoon or ice cream scoop, divide the batter evenly among the muffin cups, filling each about two-thirds full.

Let’s Bake!
Bake for 18-22 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.

Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Enjoy them fresh or store them in an airtight container for a quick snack throughout the week.
