Oven-Baked Portobello Mushrooms with Mozzarella, Tomatoes & Spanish Chorizo

Portobello mushrooms are nature’s ready-made containers — earthy, meaty, and just the right size to cradle all sorts of savory fillings.
In this Mediterranean-inspired dish, I decided to stuff them with mozzarella, tomatoes (cherry are perfect, but I had regular tomatoes at home), and slices of smoky Spanish chorizo.

I then roasted them in the oven until bubbling and got a fantastic main (that can also be a side) that’s indulgent yet remains grounded in simple ingredients.
You can serve them with a green salad or offer them as a starter at your next dinner.
How to Make this Portobello Mushroom Recipe
The beauty of this dish lies in its simplicity. Start with large, firm portobello mushrooms. Wipe them clean with a damp cloth, remove the stems, and gently scrape out the dark gills with a spoon to make room for the filling. These mushrooms act like little baking dishes — they soften in the oven while holding their shape.


The foundation of their filling is mozzarella, a cheese that’s neutral enough to balance the boldness of the other ingredients. I prepared the filling by cutting chunks of mozzarella and dicing the tomatoes. Then, I added the star of the dish, Spanish chorizo with a spicy touch.
I sliced them thinly and seasoned the whole filling with olive oil, salt, pepper, and fresh oregano. You can add a few basil leaves, too, if you have them. I added a spoonful of homemade pesto that I had in the fridge, and it worked wonders – but you can skip this step.


Although I always overdo it with the olive oil, I didn’t in this dish. Why? Because as it cooks, the chorizo releases its paprika-rich oils. This infuses the mushrooms and cheese with deep flavor, but can result in a very oily dish.

After I have my filling ready, I place the mushrooms on a baking tray and stuff them. Then, I roast everything in a hot oven (or air fryer) until the mushrooms are tender, the cheese is molten, and the chorizo is crisped at the edges. You’ll want to spoon some of the spiced oil back over the top as a final touch.

This dish is great for meal prep, naturally gluten-free, and flexible enough for family-style meals.

Oven-Baked Portobello Mushrooms with Mozzarella, Tomatoes & Spanish Chorizo
Ingredients
- 4 large Portobello mushrooms
- 200 grams fresh mozzarella (1 ball or ¾ cup, torn or sliced)
- 12 cherry tomatoes (or two to three regular tomatoes) cubed
- 80 grams Spanish chorizo thinly sliced (cured, not raw)
- 1 tbsp olive oil extra virgin
- Salt and black pepper to taste
- Fresh oregano, parsley or basil for garnish (optional)
Instructions
- Preheat the oven to 200°C (400°F).
Prepare the mushrooms:
- Wipe the mushrooms clean with a damp cloth.
- Remove stems and gently scrape out gills to create space for the filling (optional).
Assemble the filling
- In a mixing bowl, mix the pieces of mozzarella cheese, the diced tomatoes, and the sliced chorizo.
- Season with salt, pepper, and a drizzle of olive oil. You can also add some sweet paprika.
- Place mushrooms gill-side up on a parchment-lined baking tray. Season lightly with salt and pepper.
- Fill each cap with the torn mozzarella, tomatoes, and slices of chorizo.
- Drizzle a little olive oil over each mushroom.
Bake
- Bake for 20–25 minutes, or until the mushrooms are tender, the cheese is bubbling, and the chorizo is crisp.
Finish and serve
- Spoon any flavorful oil from the tray over the mushrooms. Garnish with fresh oregano or basil, if using.
- Serve warm.

These keep well in the fridge for up to 2 days. Reheat in the oven or under a broiler to restore the texture.
- Kid-friendly
Not every kid will enjoy mushrooms, but some will. Inside them, they will find familiar ingredients and a fun way to introduce bolder flavors like chorizo.
- Serving suggestions:
– You can serve them plain as a light summer (and even winter) meze. Or you can serve them with crusty bread
– Add a side of lightly dressed greens or arugula
– Pair with a glass of red wine or a crisp lager
– Add a fried egg on top for a brunch version
