For that reason, you can keep them as simple as a quick sear in a skillet, or dress them up with marinades, sauces, and seasonings when you feel like cooking something special. I’ve made them countless ways over the years, and I’m always surprised by how versatile they are.

How to Cook Pork Chops (and Keep Them Juicy)

Cooking chops in a cast iron pan is always a good idea…

Pork chops have a bad reputation for turning dry — but once you know a few tricks, you’ll never worry about that again.

  • Right cut: Bone-in chops usually stay juicier than boneless.
  • Don’t overcook: Pork is perfectly safe at 145°F (63°C) with just a hint of pink inside. A meat thermometer is your best friend here.
  • Let them rest: Give chops at least 5 minutes after cooking before you cut in. This keeps the juices where they belong — inside the meat.
  • Try different methods:
    • Pan-searing for a golden crust.
    • Grilling for smoky flavor.
    • Baking for easy, hands-off cooking.

Why I prefer cast iron pans: Cast iron holds and distributes heat very evenly, and helps you get juicy, evenly cooked pork chops with a crispy crust — something harder to achieve in a lighter, thinner pan. That’s because cast iron has a high heat retention, helping the initial sear lock in juices. These are some other reasons:

  • Better browning (Maillard reaction): The heavy, hot surface of cast iron promotes excellent browning, which intensifies flavor. A good sear adds both texture and a rich, savory taste.
  • Versatility: You can start cooking pork chops on the stovetop in cast iron, then transfer the pan straight to the oven for finishing. No extra dishes, and you get a perfect sear + bake combo.
  • Durability: Cast iron is virtually indestructible and can handle high heat without warping, unlike some stainless steel or nonstick pans.

Classic Pan-Seared Pork Chops

Let’s start with something simple, because sometimes the best meals are the ones with hardly any fuss. These pan-seared pork chops are exactly that. A hot skillet, a little butter, and some seasoning are all you need.

Ingredients:

  • 2–4 pork chops (bone-in or boneless, about 2.5 cm thick)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • Optional: paprika or dried thyme for extra flavor

Steps:

  • Pat the pork chops dry with paper towels; this helps them brown nicely. Season both sides generously with salt, pepper, and garlic powder.
  • Place a large skillet (cast iron is my favorite) over medium-high heat. Add the olive oil and let it get hot until it shimmers.
  • Lay the pork chops in the skillet without crowding them. Let them sear undisturbed for about 3–4 minutes on the first side, until they develop a golden crust.
  • Turn the chops, add the butter to the pan, and let it melt. Tilt the skillet slightly and spoon the melted butter over the chops as they cook for another 3–4 minutes, or until the internal temperature reaches 63°C (~145°F ).
  • Remove the chops from the pan and let them rest for about 5 minutes before serving. This keeps them juicy.

Garlic Butter Pork Chops

These chops are rich and full of garlic flavor. They feel a little fancy, but they’re actually really quick and easy to make.

Ingredients:

  • 2–4 pork chops
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • Salt and black pepper
  • Juice of ½ a lemon
  • Fresh parsley, chopped (optional)

Steps:

  • Season pork chops with salt and pepper.
  • Heat a skillet over medium heat and sear the chops in a little oil until browned (about 3–4 minutes per side).

  • Add the cider and return the chops to the pan.

  • 50 g Feta cheese (if you prefer a creamier texture, use a good quality cream cheese)

  • In a separate bowl, mix the cooked spinach with the cheeses

  • 2–4 pork chops
  • 150 g breadcrumbs for softness
  • 1 egg, beaten
  • Salt and pepper to taste
  • Spray oil

Steps:

  • This very easy recipe wants you to season the chops and dip them in beaten egg.
  • Then, coat them with breadcrumbs (regular breadcrumbs or panko breadcrumbs).
  • Air fry them at 200 °C for 12–15 min, flipping halfway.

Pork Chops with Caramelized Onions

I used to make this recipe with beef, until I discovered caramelized onions also work great with pork chops, making these chops extra flavorful and perfect for a simple dinner.
