Sweet and Spicy Chicken with Vegetables
A delicious and quick dinner fix, this Sweet and Spicy Chicken with Vegetables is super tasty thanks to a sweet chili marinade. It’s fantastic for a cozy family dinner and just as delicious the next day, tucked inside garlic bread rolls or tortillas for easy meals on the go.

There’s something really tasty about marinating chicken in sweet chili sauce. The sauce works as a flavor booster, adding both tangy sweetness and gentle heat, while helping the chicken stay tender and juicy.

I’ve learned that if I let the chicken rest in this marinade—even just a couple of hours, but ideally overnight—the results are always excellent. This dish has become a staple in my winter kitchen, not only for family dinners but also for school lunches.
I often cook it in batches so I can shred the chicken and roll it into tortillas for my kids to take to school during the week.
It’s a lifesaver on busy days, and the vegetables that roast alongside the chicken soak up all those sweet and spicy juices, making the tray irresistible.
How I Make This Chicken

I always start by preparing the marinade. In a large bowl, I combine olive oil, minced garlic, lemon juice, and plenty of sweet chili sauce.
When I have my homemade chutney with figs and tomatoes on hand, I sometimes replace part of the sauce with it—it makes the dish even more flavorful.


I season the mix with salt, pepper, fresh thyme, rosemary, and oregano. Then I add the chicken pieces, making sure they are well coated, and let them sit in the fridge for a couple of hours, or even overnight if I have time.
When it’s time to bake, I prepare the vegetables. I roughly chop potatoes, onion, zucchini, eggplant, and red bell pepper, and scatter them over a baking tray.


The chicken goes in the tray, and I pour any remaining marinade over everything. I bake the tray until the chicken is golden and tender and the vegetables have caramelized edges.
The kitchen smells incredible, and I always make extra because leftovers never go to waste.


Sweet and Spicy Chicken with Vegetables
Ingredients
- 2 kilos chicken legs, thighs, or breast boneless
- 4 tbsp olive oil extra virgin
- 2 garlic cloves minced
- 200 ml sweet chili sauce (or 100 grams of homemade tomato and fig chutney)
- Juice of 1 lemon
- 1 tbsp fresh thyme
- 1 tbsp fresh rosemary
- 1 tbsp dried oregano
- Salt and pepper to taste
- 1 large onion sliced
- 3-4 potatoes cubed
- 1 zucchini cut into chunks
- 1 large eggplant cubed
- 1 1 red bell pepper sliced
Instructions
Prepare the marinade:
- In a bowl, mix the olive oil, minced garlic, sweet chili sauce (or chutney), lemon juice, herbs, salt, and pepper.
Add the chicken:
- Coat the chicken pieces thoroughly with the marinade and refrigerate for at least 2 hours, ideally overnight.
- Preheat the oven to 180°C (350°F).
Prepare the vegetables:
- Place the onion, potatoes, zucchini, eggplant, and red bell pepper in a large baking tray.
- Arrange the chicken next to the vegetables and pour any remaining marinade on top.
- Bake for about 1 hour and 30 minutes, until the chicken is fully cooked and golden and the vegetables are tender.
- Serve hot, or store leftovers to enjoy the next day.

For maximum flavor, marinate the chicken overnight.
- Vegetable swaps
Try adding carrots, sweet potatoes, or mushrooms, depending on what’s in season, just as we do in Crete.

- Spice level
Adjust the sweet chili sauce according to your heat preference, or mix in a little hot sauce if you like it spicier.
