Tuna Pie in Puff Pastry – Super Easy, Super Tasty

This Tuna Pie in Puff Pastry is one of those recipes that never fails to impress while taking almost no effort at all: It’s the perfect quick meal for busy days! I first started baking it for Easter, but it was so good (and so easy!) that it became a year-round favorite in my kitchen. Serve it warm or at room temperature—it’s always a crowd-pleaser.

This tuna pie in puff pastry is one of my favorite dishes. It’s one of those recipes that’s right for any time of the year. In summer, I love serving it slightly cooled with a crisp side salad for a light lunch.

In winter, it turns into comfort food, paired with a steaming soup for dinner.

The beauty of this pie lies in its simplicity: it comes together with ingredients that most of us already have in our pantry or fridge. A can of tuna (or even mackerel), a couple of eggs, some tomato passata, and puff pastry are often all you need.

It’s proof that with just a few everyday staples, you can create a dish that’s versatile enough to fit every season.

How I Make It

I begin by gathering all the ingredients: about 250 g of well-drained tuna, a couple of anchovy fillets (optional, but they give wonderful depth to the sauce), diced tomato, scallions, a red bell pepper, and 2 cloves of garlic. I also prepare two hard-boiled eggs and around 120 g of thick tomato passata.

If I have them on hand, I like to add a few capers for extra flavor. For seasoning, I use salt, black pepper, chili flakes or sweet paprika, a little fresh thyme, and just a pinch of sugar to balance the sauce. The puff pastry stays in the fridge until the filling is ready, so it keeps nice and firm.

I start by dicing the tomato, onion, and red bell pepper, then set them aside. Next, I mince the garlic together with the anchovies and thyme until they turn into a kind of paste, and I blend in a tablespoon of tomato paste.

Since I use tuna preserved in olive oil, I save that oil after draining it and add a couple more tablespoons to the pan. In goes the garlic-thyme-anchovy paste, and a few capers, and I let them sizzle gently for about 5 minutes until the oil is fragrant.

Then I add the diced vegetables and let them cook down for about 15 minutes. I season with salt, pepper, paprika (or chili flakes), and a little sugar to balance the flavors. Once the veggies are soft, I stir in the tuna and cook for another 5 minutes.

The passata goes in last, and I let it simmer until the sauce is thick and not watery. Then I add the green part of the scallions.

Now it’s time for the passata.
Once it’s cooked, turn off the heat. This is the right consistency.

While the filling cools, I chop the hard-boiled eggs—my trick is to do this with a fork so the pieces stay chunky instead of mushy. I mix them into the filling once it’s cooled completely.

Now it’s time for the pastry! I line a silicone tray with one sheet of puff pastry, spoon in the filling, and cover it with another sheet.

If I have leftover pastry, I like to cut it into the shape of a fish to decorate the top. It bakes for about 20 minutes, or until the crust is golden. I serve it warm, but honestly, it’s just as delicious at room temperature.

Ingredients
  

  • 2 sheets puff pastry chilled
  • 250 grams canned tuna in olive oil drained (reserve the oil)
  • 2-4 anchovy fillets (optional)
  • 1 medium tomato diced
  • 1 red bell pepper diced
  • 1-2 scallions white part separated from green part, finely chopped
  • 2 garlic cloves minced
  • 120 grams thick tomato passata (about ½ cup)
  • 2 hard-boiled eggs chopped
  • 1 tbsp capers (optional)
  • 2-3 tbsp olive oil (use the tuna oil + extra if needed)
  • 1 tsp thyme (dried or fresh)
  • ¼ tsp paprika or chili flakes
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 1 tsp sugar

Instructions
 

  • Prep the vegetables. Dice the tomato and red bell pepper. Separate the white and green parts of the scallions. Mince the garlic with the anchovies and thyme until it forms a paste. Add a tablespoon of tomato paste to the garlic and anchovy mixture
  • Start the filling. Heat the tuna oil with a little extra olive oil in a large pan. Add the garlic-anchovy paste and the capers. Sauté gently for about 5 minutes until fragrant.
  • Cook the vegetables. Add the white parts of the scallions, diced tomato, and red bell pepper. Cook for about 10 minutes until softened, stirring occasionally. Season with salt, pepper, paprika or chili, and sugar.
  • Add the tuna. Stir in the drained tuna and cook for another 5 minutes.
  • Finish the sauce. Pour in the passata and let it simmer until thickened (at least 10 more minutes). Five minutes before finishing, stir in the green parts of the scallions to keep their color and flavor fresh. Remove from heat and let the filling cool.
  • Add the eggs. Chop the hard-boiled eggs with a fork so they stay chunky, then gently mix them into the cooled filling.
  • Assemble the pie. Line a baking dish or silicone tray with one sheet of puff pastry. Spoon in the filling, then cover with the second sheet. Seal the edges. Use leftover pastry to decorate if desired.
  • Bake. Preheat the oven to 200°C (390°F) and bake for about 20 minutes, or until golden and puffed.
  • Serve. Enjoy warm with a salad in summer or with soup in winter. Also delicious at room temperature.

Fish Variations: Yes, you guessed right, tuna is not the only option, you can make this pie with other fish:

  • Mackerel pie
    Use canned mackerel in olive oil instead of tuna for a richer, more intense flavor. Works well with capers and a touch of lemon zest.
  • Salmon pie
    Swap tuna for canned or fresh-cooked salmon. Add dill or parsley to the filling for freshness.
  • Sardine pie
    Use canned sardines (remove any bones) for a rustic twist. Pair with olives and red onion for a Mediterranean touch.
  • Cod pie
    Flake in cooked cod or even salted cod (after desalting). Excellent with extra peppers and a hint of smoked paprika.

Chicken Variation

  • Chicken puff pastry pie
    Replace tuna with shredded cooked chicken (great for leftovers or rotisserie chicken). Add mustard or curry powder for extra flavor.

Vegetarian Variation

  • Mediterranean veggie pie
    Skip the fish and use diced zucchini, mushrooms, and extra peppers. Add chickpeas or lentils for protein, and optionally crumble in some feta.

Cheesy Twist

  • Tuna and cheese pie
    Mix grated cheese (such as kefalotyri, Parmesan, or cheddar) into the filling for a creamier, richer pie.

Fresh Herb Upgrade

  • Add chopped parsley, dill, or basil to the filling before baking for a fresher taste.

Make Ahead & Storage

  • Prepare the filling in advance
    The tuna mixture can be made up to 2 days ahead and stored in an airtight container in the fridge. Let it cool completely before storing.
  • Refrigerate
    Store leftover pie in the fridge, covered or in an airtight container, for up to 3 days.
  • Reheat
    Warm slices in the oven at 180°C (350°F) for 10–15 minutes. Avoid microwaving if possible, as it softens the pastry.
  • Freezing
    Unbaked pie – Assemble the pie, wrap it tightly in plastic wrap and foil, and freeze for up to 2 months. Bake directly from frozen, adding about 10 extra minutes to the baking time.
  • Baked pie – Let it cool completely, wrap well, and freeze for up to 1 month. Reheat in the oven until hot and crisp.
