Thanksgiving Cakes
These cakes are the perfect way to end your feast, because calories don’t count on Thanksgiving, right?
1. Chocolate Baklava Pumpkin Cake
Let’s start with a very Greek cake that I love! A festive cake with chocolate and pumpkin batter inspired by Greek baklava.

Ingredients:
- 200 grams all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 100 grams chopped walnuts
- 150 grams pumpkin puree
- 150 grams of sugar
- 100 ml olive oil (mild flavor)
- 2 large eggs
- 50 grams of cocoa powder
- 100 ml of water or milk
- 2 tbsp honey
Instructions:
- Preheat the oven to 175°C (~350°F).
Grease a loaf or small bundt pan. - In a bowl, mix the flour with baking powder, cinnamon, and walnuts.
- In another bowl, whisk the sugar, the olive oil, the eggs, and the pumpkin puree until you can form a smooth mixture.
- Combine wet and dry ingredients until they’re just mixed.
- Split the batter in two. Stir cocoa powder into one-half of the water or milk.
- Spoon the two batters alternately into the pan and gently swirl with a knife for a marbled effect.
- Bake for 45-50 minutes, or until a toothpick comes out clean.
- While it’s still warm, you can garnish by drizzling honey over the top to add that sweet baklava touch.
2. Apple Cider Bundt Cake
This is a dense, flavorful cake infused with apple cider and topped with glaze. Pleasing for kids and adults alike!

Ingredients:
- 250 grams all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 150 grams of sugar
- 120 ml vegetable oil
- 2 large eggs
- 240 ml apple cider
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 175°C (~350°F).
Grease and flour a bundt pan. - In a bowl, whisk together all the dry elements: flour, baking powder, baking soda, cinnamon, and nutmeg.
- In another large bowl, beat the sugar and the oil until combined.
Add the eggs one at a time, mixing well after each.
Stir in apple cider and vanilla extract. - Gradually add the dry ingredients to the wet mix, mixing just until combined.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
3. Maple Walnut Cake
A tender, moist cake infused with maple syrup and studded with toasted walnuts, balancing sweetness and texture — a cozy fall favorite!

Ingredients:
- 220 grams all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 100 grams of sugar
- 120 ml maple syrup
- 120 ml vegetable oil
- 2 large eggs
- 100 ml of milk
- 100 g chopped walnuts
Instructions:
- Preheat the oven to 180°C (~350°F).
Grease and flour a loaf pan. - In a bowl, whisk together the dry ingredients (flour, baking powder, baking soda, and salt).
- In another bowl, beat the sugar with the maple syrup and oil until combined.
Add the eggs one at a time, mixing well after each.
Stir in the milk. - Gradually fold the dry ingredients into the wet mixture until just combined.
Gently fold in some chopped walnuts (or other nuts you prefer). - Pour the batter into the prepared pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
4. Upside Down Apple Cake
Probably the first cake I ever cooked in my whole life, this recipe has been in my family for decades. It features sweet apples caramelized to perfection, resting atop a spiced cake.

Ingredients:
- 3 large apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
- 50 grams unsalted butter (about 3.5 tbsp)
- 100 grams brown sugar (about ½ cup)
- 1 tsp ground cinnamon
- 150 grams all-purpose flour (about 1¼ cups)
- 1 tsp baking powder
- ¼ tsp salt
- 100 grams granulated sugar (½ cup)
- 1 large egg
- 120 ml whole milk (½ cup)
- 60 ml vegetable oil (¼ cup)
- 1 tsp vanilla extract
Instructions:
- First, preheat your oven to 180°C (~350°F). While it warms up, let’s prepare the gorgeous caramelized apple topping.
- Melt the butter over low heat on the stove or place it in the oven just until softened. Add the brown sugar to the melted butter and stir gently over low heat until the mixture turns into a smooth, bubbly caramel — about 2-3 minutes. Be careful not to burn it!
- Once your caramel is ready, remove the pan from the heat and evenly spread it across the bottom.
- Arrange the apple slices neatly on top of the caramel, then sprinkle the cinnamon over the apples
Sprinkle the cinnamon over the apples for that warm, inviting aroma. Set aside for now. - In a medium bowl, whisk together the flour, baking powder, salt, and granulated sugar until evenly combined.
- In another bowl, beat the egg, then add the milk, oil, sugar, and vanilla extract, mixing gently.
- Pour the wet ingredients into the dry and stir just until everything comes together — don’t overmix, or the cake might turn out dense.
- Carefully pour the batter over the apples in your prepared pan, smoothing the top gently with a spatula.
- Pop the pan into your oven and bake for about 40-45 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden around the edges.
- When it’s done, let the cake cool in the pan for about 10 minutes — this step is important to allow the caramel to set slightly and to make flipping easier.
- Run a knife gently around the edges to loosen, then place a serving plate over the cake pan and flip it upside down in one smooth motion. Lift the pan off carefully to reveal the apple topping.
- Serve warm or at room temperature, maybe with a scoop of vanilla ice cream or a dollop of whipped cream.
5. Cranberry Orange Cake
There’s something about orange paired with cranberries that just screams fall. This cake is moist and dense, perfect with a cup of coffee or as a festive dessert.

Ingredients:
- 225 grams unsalted butter, softened (1 cup)
- 200 grams granulated sugar (1 cup)
- 3 large eggs
- 250 grams all-purpose flour (2 cups)
- 1 tsp baking powder
- ½ tsp salt
- Zest of 2 oranges
- 60 ml freshly squeezed orange juice (¼ cup)
- 120 ml buttermilk (½ cup)
- 150 grams fresh or frozen cranberries (about 1 cup)
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 175°C (350°F).
Grease and flour a 23×13 cm (9×5 inch) loaf pan. - In a large bowl, cream the softened butter and sugar together until light and fluffy — this usually takes about 3-5 minutes with a hand or stand mixer.
Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. - In a separate bowl, whisk together the flour, baking powder, and salt.
Add the dry ingredients to the butter mixture alternately with the buttermilk, starting and ending with the flour mixture.
Mix gently just until combined. - Stir in the orange zest, orange juice, vanilla extract, and cranberries — fold carefully so the cranberries don’t break up too much.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
If the top browns too fast, tent it loosely with foil halfway through baking. - Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
6. Gingerbread Loaf
Do you want something spicy but easy to make? This gingerbread loaf is fantastic! It’s moist and packed with — perfect to enjoy with a strong cup of coffee or tea.

Ingredients:
- 250 grams all-purpose flour (2 cups)
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- ½ tsp salt
- 120 ml molasses (½ cup)
- 150 grams brown sugar (¾ cup, packed)
- 1 large egg
- 240 ml buttermilk (1 cup)
- 80 ml vegetable oil (⅓ cup)
- 1 tsp vanilla extract
Instructions:
- 250 g all-purpose flour (2 cups)
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- ½ tsp salt
- 120 ml molasses (½ cup)
- 150 g brown sugar (¾ cup, packed)
- 1 large egg
- 240 ml buttermilk (1 cup)
- 80 ml vegetable oil (⅓ cup)
- 1 tsp vanilla extract
No Buttermilk? No Problem!
If you’re out of buttermilk, simply make a quick substitute by mixing milk with a splash of lemon juice or white vinegar. You can also thin yogurt or sour cream with milk for a creamy alternative that works just as well.
7. Simple Apple & Pecan Pie
A rustic pie with apples and pecans on top. A sweet and home-style cake that’s perfect for fall. This simplified version swaps cake batter for a classic pie crust and focuses on fresh apples — less fuss but all the seasonal flavor you want!

Ingredients:
- 1 prepared pie crust (store-bought or homemade), 23 cm (9-inch)
- 4 medium apples (about 600 grams), peeled, cored, and sliced
- 100 grams pecan halves (1 cup)
- 100 grams brown sugar (½ cup, packed)
- 2 tbsp unsalted butter, melted
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tbsp all-purpose flour
- 1 tsp vanilla extract
- 1 tbsp lemon juice
Instructions:
- Preheat your oven to 190°C (~385°F).
- Roll out the pie crust into your 23 cm (9-inch) pie dish and set aside.
- In a large bowl, toss the apple slices with lemon juice, cinnamon, nutmeg, flour, vanilla extract, and half the brown sugar.
Make sure everything is evenly coated. - Pour the apple mixture into the pie crust, spreading it out evenly.
- Mix the melted butter with the remaining brown sugar and pecans, then sprinkle this mixture evenly over the apples.
This will create a sweet, crunchy topping. - Bake the pie on the middle rack for 40–45 minutes until the apples are tender and the pecans caramelize on top.
If the crust edges brown too quickly, cover them loosely with foil. - Let the pie cool for at least 20 minutes before serving to let the filling set.

- Gradually add dry ingredients to wet and mix until just combined.
Fold in the grated carrots and the nuts (if using). - Pour the batter into the pan(s) and bake for 40-45 minutes, or until a toothpick comes out clean.
- Cool completely before frosting.
Ingredients for the Cream Cheese Frosting
- 225 g cream cheese, softened
- 60 g unsalted butter, softened
- 200 g powdered sugar (1 ⅔ cups), sifted
- 1 tsp vanilla extract
Instructions for the Cream Cheese Frosting
In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the sifted powdered sugar, beating continuously until the frosting is light and fluffy.
Mix in the vanilla extract until fully incorporated.
Use immediately or refrigerate until ready to frost your cake. Before spreading, let the frosting come to room temperature and give it a quick stir.
9. Brown Butter Pear Cake
This cake is all about the brown butter nutty taste paired with jpears. It’s simple but elegant — a showstopper for any autumn dessert table and easy to whip up.

Ingredients:
- 115 grams unsalted butter (1 stick)
- 200 grams all-purpose flour (1 ⅔ cups)
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 150 grams granulated sugar (¾ cup)
- 2 large eggs
- 120 ml buttermilk (½ cup)
- 2 ripe pears, peeled, cored, and sliced
- 1 tsp vanilla extract
- 1 tsp ground cinnamon (optional)
Instructions:
- Preheat the oven to 175°C (~350°F).
Grease and flour a 23 cm (9-inch) round pan. - In a small saucepan, melt the butter over medium heat.
