How to Make Lahanodolmades: Greek Cabbage Rolls

Soft cabbage leaves wrapped around a fragrant, herb-scented filling, slowly simmered until tender and finished with a bright, lemony touch. Lahanodolmades are the kind of winter comfort that warms the kitchen before it ever reaches the table — deeply satisfying, unmistakably Greek, and impossible to resist once you’ve had the first bite.

Few dishes feel as nurturing and nostalgic as a pot of lahanodolmades gently simmering on the stove. This is the food of cold days, big family tables, and quiet Sundays when the house fills with steam and lemony aromas.

In Greece, cabbage rolls are not rushed food — they are made slowly, carefully, almost ceremonially, with patience and love.

In Crete, we pay attention to every detail: how tender the cabbage leaves are, how aromatic the herbs smell when chopped, how tightly the rolls are packed so they cook evenly without opening. Lahanodolmades are humble, yes — but when done properly, they are deeply satisfying, comforting, and elegant in their simplicity.

You can finish them with the traditional avgolemono or a lighter lemon sauce; this is one of those dishes that always tastes like home.

How I Make Lahanodolmades

Ingredients.
Cut the center of the cabbage.
Boil.
Drain the boiled leaves.

I start by bringing a large pot of salted water to a boil. I carefully remove the stem from the cabbage and place it into the pot, stem-side down.

As it boils, gently loosen the outer leaves with a ladle, removing them one by one as they soften. This takes time and patience — rushing will tear the leaves.

Once removed, lay them on a baking pan to cool and drain.

Prepare the filling.
Cut the hard center from the leaf.

For the filling, mix ground beef with rice and cumin in a large bowl. Finely chop onion and garlic and add them in, followed by plenty of fresh herbs — dill, mint, and parsley.

I always keep the herb stems aside for later.

Season with salt, pepper, and olive oil, then mix until everything is well combined but still light.

To assemble, I line the bottom of a wide pot with the reserved herb stems and a layer of small or torn cabbage leaves. I prepare each leaf by trimming the thick central vein, then add a spoonful of filling and roll it gently but firmly.

The rolls are placed snugly next to each other in the pot — no gaps — so they stay closed while cooking.

Once all the rolls are arranged, cover them with extra cabbage leaves and place a small plate on top to keep them stable.

Fit them snuggly at the bottom of the pot.
Add vegetables for extra flavor.
Cover with a plate and add water.
Cut one to check when they’re tender (ready).

Add water until it reaches the level of the plate and simmer gently for about an hour and a half, checking occasionally to make sure the water level stays consistent.

Serve them with a thick lemon sauce.

  • Choose the right cabbage
    White or savoy cabbage works best; it should feel heavy and fresh.
  • Don’t overfill
    A small amount of filling is enough — the rice expands as it cooks.
  • Pack them tightly
    This prevents the rolls from opening while simmering.
  • Herb stems are gold
    They perfume the cooking liquid beautifully — never throw them away.
  • Ahead of time
    Lahanodolmades taste even better the next day.
  • Variation
    You can replace part of the beef with ground pork, or make them lighter with more herbs and less meat.

Avgolemono Sauce — and a Lighter Lemon Alternative

The classic way to finish lahanodolmades is with avgolemono, the iconic Greek egg-and-lemon sauce that turns velvety and rich when done properly. It adds warmth, depth, and that unmistakable lemony comfort we associate with winter dishes.

If you prefer something lighter (or egg-free), a simple lemon sauce works beautifully. Made with butter, flour, broth, lemon zest, and juice, it thickens gently and coats the rolls without overpowering them.

Both versions celebrate lemon — the soul of Greek cooking —, and you can choose depending on the occasion.

Ingredients
  

For the cabbage rolls

  • 1 large white cabbage (about 1.8–2 kg)
  • 600 grams ground beef or pork
  • 120 grams short-grain rice (1/2 cup)
  • 1 large onion finely chopped (about 1 cup)
  • 2 cloves garlic finely chopped
  • ½ cup fresh dill finely chopped
  • ¼ cup fresh parsley finely chopped
  • ¼ cup fresh mint (optional) finely chopped
  • 1 tsp ground cumin
  • 2 tsp salt
  • ½ tsp freshly ground black pepper
  • 80 ml olive oil extra virgin (1/3 cup)

For the lemon sauce

  • 50 grams butter (3½ tbsp)
  • 40 grams all-purpose flour (⅓ cup)
  • 750 ml water or light broth (3 cups)
  • 1 bouillon cube
  • Zest of 1 lemon
  • Juice of 2 lemons (⅓ cup)
  • 2 tbsp olive oil esxstra virgin
  • Freshly ground black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Remove the cabbage stem and place the cabbage in the pot, stem-side down.
  • Gradually remove the softened outer leaves using a ladle. Transfer them to a baking pan to cool and drain.

Filling:

  • In a bowl, combine the ground beef with the rice, cumin, finely chopped onion, garlic, and herbs.
  • Season with salt, pepper, and olive oil, and mix well.
  • Reserve the herb stems.
  • Line the bottom of a wide pot with the herb stems and a layer of small or torn cabbage leaves.
  • Trim the thick central vein from each cabbage leaf. Add filling and roll gently.
  • Arrange the rolls tightly in the pot.
    Optional: Add a few vegetables for extra taste (carrot, zucchini, potato, onion)
  • Cover with extra cabbage leaves and place a plate on top.
  • Add water until it reaches the height of the plate.
  • Simmer over medium heat for about 1½ hours, topping up the water if needed.

Lemon sauce (similar to avgolemono)

  • Melt butter in a pot, add flour, and sauté briefly.
  • Gradually whisk in water until thickened.
  • Remove from heat and add bouillon, lemon zest and juice, olive oil, and pepper.
  • Pour the sauce over the cabbage rolls, garnish with fresh dill, olive oil, and lemon slices, and serve warm.

    Delicious and easy to make! I will save this recipe to make them again. I have tried them with the lemon sauce which is good, but I think they can also be great with tomato sauce, do you think it is possible to make them that way?
