In Greek cooking, chicken is usually marinated or roasted with minimal fuss. Even a short marinade helps the meat pick up flavor, and bone-in pieces stay moist while cooking.

Here’s a tip I always follow: don’t rush it. Roast the chicken slowly, keep an eye on it, and finish with a little lemon or fresh herbs. A few small steps like this turn a simple chicken into something memorable.

  • Cook low and slow in the oven
    Oven-roasting with vegetables allows flavors to meld, and the results will be quite noticeable.
  • Finish with fresh herbs and lemon
    A sprinkle of parsley or a squeeze of lemon juice at the end brightens any chicken dish; don’t forget it!
  • Don’t overcook
    Chicken can dry out easily; aim for 165°F (74°C) internal temperature for perfect results.

Few things are as comforting as a plate of well-seasoned Greek chicken. Lemon, oregano, a touch of garlic… It’s simple, but it hits all the right notes. These recipes are easy enough for a weeknight dinner yet impressive enough to serve to guests.

Greek Lemon-Oregano Chicken

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 3 tbsp olive oil
  • Juice of 2 lemons
  • 4 garlic cloves, minced
  • 2 tbsp dried oregano
  • Salt and pepper

Instructions:

  • Preheat the oven to 200°C (~400°F).
  • Mix the olive oil with the lemon juice, garlic, oregano, salt, and pepper in a bowl. I usually taste a little to make sure the seasoning is right.
  • Coat the chicken with the mixture and place it in a baking dish.
  • Roast for 35–40 minutes until the chicken is cooked through. I always check that the juices run clear.
  • Serve with roasted potatoes or a simple salad.

Homemade Chicken Souvlaki

Ingredients:

  • 1.5 lbs boneless chicken breasts, cut into cubes
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 tbsp dried oregano
  • Salt and pepper
  • Wooden skewers, soaked for 30 minutes

Instructions:

  • Mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Toss the chicken cubes in the marinade. I usually let them sit for at least 30 minutes; overnight is even better.
  • Thread the chicken onto the skewers.
  • Grill over medium-high heat, about 5–7 minutes per side. I never overcook—grill the chicken just until juices run clear.
  • Serve with pita, tzatziki, and salad.

Greek Chicken with Feta and Tomatoes

Ingredients:

  • 4 boneless chicken breasts
  • 2 tbsp olive oil
  • 1 pint cherry tomatoes (or the tomatoes you have)
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp dried oregano
  • Salt and pepper

Instructions:

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a skillet and sear chicken for 2–3 minutes per side. I usually season the chicken first with salt, pepper, and oregano.
  • Place the chicken in a baking dish, and top it with tomatoes, olives (optional), and feta.
  • Bake for 20–25 minutes until cooked through.
  • I like to serve it with rice or crusty bread.

Chicken Gyro Bowl

This is one of my favorites when I am trying to cut bread.

Ingredients:

  • 500 grams chicken thighs, cut into strips
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 2 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper
  • 1 cup cooked rice (white, brown, or a mix)
  • 1 cup chopped lettuce
  • 1/2 avocado, sliced
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup feta cheese, crumbled (optional)
  • 2–3 tbsp tzatziki or Greek yogurt

Instructions:

  • Mix the olive oil with lemon juice, cumin, paprika, salt, and pepper. Toss the chicken in the marinade and let it sit for at least 30 minutes. I usually marinate it while I prep the veggies.
  • Heat a skillet over medium-high heat and cook the chicken 5–7 minutes, until fully cooked. I like to test a piece to make sure it’s done but still juicy.
  • To assemble the bowls, divide the cooked rice into bowls.
  • Top with lettuce, avocado slices, and corn. You can even add cherry tomatoes and feta.
  • Add the cooked chicken on top and drizzle with tzatziki or Greek yogurt. I usually serve it immediately so the avocado stays fresh.
  • Tip: You can add a squeeze of extra lemon or a pinch of smoked paprika on top for extra flavor.

Greek Chicken with Lemon and Potatoes (Kotopoulo Lemonato)

Ingredients:

  • 4 bone-in chicken thighs
  • 4 potatoes, cut into wedges
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 garlic cloves, minced
  • 1 tbsp dried oregano
  • Rosemary
  • Salt and pepper

Instructions:

  • Preheat the oven to 200°C (~400°F).
  • Mix the olive oil with lemon, garlic, oregano, rosemary, salt, and pepper. Coat both the chicken and the potatoes. I usually toss everything in a big bowl first to make sure the potatoes get the flavor too.
  • Arrange everything in a baking dish and roast for 45–50 minutes.
  • I like to check the potatoes halfway through and give them a little turn.
  • Serve warm with vegetables or salad.

Chicken with Yogurt, Garlic & Herbs

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • Salt and pepper to taste

Instructions:

  • In a bowl, combine the Greek yogurt, minced garlic, lemon juice, olive oil, dried oregano, salt, and pepper. Mix well to create the marinade.
  • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 1 hour, preferably overnight. The longer the chicken marinates, the more flavorful it becomes.
  • Preheat your grill or skillet over medium heat. Remove the chicken from the marinade, allowing any excess to drip off.
  • Cook the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 75°C (~165°F) and is no longer pink in the center.
  • Let the chicken rest for a few minutes before slicing. Serve with a side of Greek salad, pita bread, or over a bed of rice for a complete meal.

Greek Chicken Pasta with Feta & Olives

Ingredients:

  • 500 grams of orzo pasta
  • 2 tbsp olive oil
  • 1 lb chicken breasts, cubed
  • 4 garlic cloves, minced
  • 1/2 cup olives, halved
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp oregano
  • Salt and pepper

Instructions:

  • Start by cooking the pasta with some salt (we need it to be cool to assemble the dish). Drain it and set it aside.
  • Heat oil in a skillet where you will cook the chicken until it’s crispy and done. I usually add garlic in the last minute so it doesn’t burn.
  • Toss the pasta with chicken, and add the olives, some crumbled feta, and oregano. Heat briefly (do not melt the feta).
  • Serve it hot. I sometimes squeeze a bit of lemon on top.

Spinach and Feta Stuffed Chicken Breasts

Ingredients:

  • 4 chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup feta (or any other type of cheese you like)
  • 1/4 cup ricotta
  • 1 tbsp olive oil
  • Salt and pepper

Instructions:

  • Preheat the oven to 190°C (~375°F).
  • Mix the spinach with the feta, ricotta (Cretan myzithra also goes well), salt, and pepper. I always taste the filling before stuffing.
  • Cut pockets in the chicken, and stuff the breasts with the mixture.
  • Sear in a skillet with a bit of extra virgin olive oil, cooking about 2–3 minutes per side, then bake 20–25 minutes.
  • Serve with roasted vegetables or a simple green salad with olive oil and lemon juice.

Greek Chicken Soup (Avgolemono)

Ingredients:

  • 1 whole chicken (1.5 to 2 kg)
  • 10 cups of water
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup rice
  • 4 eggs
  • Juice of 2 lemons
  • Salt and pepper

Instructions:

  • Simmer the chicken with the onion, carrots, and celery for 1–1.5 hours. I usually skim the foam off the top.
  • Remove the chicken, and strain the broth. Add rice to the broth and cook it until it’s tender.
  • Whisk the eggs and the lemon juice. Gradually mix in some hot broth to temper the eggs. Be careful not to cook them.
  • Return the egg mixture and the shredded chicken to the soup and stir gently.
  • Season to taste and serve. I never add extra salt until the end because the broth is flavorful on its own.

Greek Chicken Skillet with Peppers and Olives

I must start by saying that one half of this blog (the Cretan half, to be precise) does not love olives, so consider them completely optional!

Ingredients:

  • 750 grams of chicken breasts, cut into pieces
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 cup olives, halved (optional)
  • 1 tbsp oregano
  • Salt and pepper

Instructions:

  • Heat the oil in a skillet and cook the chicken until it’s lightly browned. I usually check a piece to make sure it’s cooked through.
  • Add the peppers and cook for 3–4 minutes.
  • If you use them, add the olives, as well as the oregano, salt, and pepper. Stir and heat for a minute.
  • Serve over rice or with fried potatoes or bread. I often drizzle a little extra olive oil on top before serving.

Cooking Greek chicken doesn’t have to be complicated. I usually stick to simple ingredients—lemon, olive oil, garlic, herbs—and it always turns out great. The recipes here are ones I like to make when I want something tasty without spending hours in the kitchen.
